Actually, I managed to stay on my feet but lose my dignity at the same time with lots of flailing arms and drunk-looking legs.

I went to slop them hogs and for the first time, looked at them and ACTUALLY saw cuts of meat! It must've been "freezing rain delirium!" I even saw the trotters and headcheese....and thought of someone who might like the ears. Yikes. Good thing it was raining and there were no Ms. Hoyty-Toyties walking by on the xmas tree farm at that moment. It woulda been ugly. Story fodder, though.

We are gonna process on the first day we have off after the tree farm closes for the season. They often run out of trees and close a week or so before xmas, so it could be soon!

Then I'll join you in the pork frenzy!!! WOOHOO!!!!!

WZ!!! My mead is bubbling and it makes me think of you! :p When you posted about racking your mead a while ago, I thought, "What the heck is she talking about? Mead? Racking? HUH?"

Now I'm racking and rolling with the best of 'em! :lol: It is so easy!

Oooo, I can't wait to post about my hog killing day! And my pork eating stupor!

hard cider... say.. i think we got some of that.. i've been "wracking" my brain trying to remember.. HA

we'll its 0* out there right now. took the pup out and all the dogs mushed in the snow - they just love it.

while i fed little kai inside i gave Dogs #1 and #2 a couple of huge bones outside...from yesterday's meat cutting adventure.

it went really well. i used a couple of great resources:

it took us a while to figure out what was what but then we could visualize the pork chops and we got down to business. the best investment we ever made was that $30 butcher saw from Gander Mountain.

we've got two more sides to go today. the garage is still like a meat locker so they are well chilled.

we brought in my stainless steel tabletop that we usually use outside for poultry processing - i put it over my center island and it works like a dream.

however

all these cats sure are interested in whats going on... Teddi tried to haul off a piece. then she got a time out and sulked. cats. sheesh!

its all pork here all the time - go BACON!

Happy Monday back at ya. The roads are bad. I had to take Cole to school today and slid the whole 1/2 mile there and back. Sheesh I can't believe they had school today. I think we got 5-6 inches of snow. How much did you all get?

Hey OFG,

I read the blog tutorial. Great pictures, not to gross. I expected to see more blood and guts. I am surprised at how the whole process was handled. Very "butcher shop" . I can't wait to show my dh.
