Ok, so talk to me, please, food guru's - calorie counting etc.

We had brown rice spaghetti last night! It was my first time to try brown rice spaghetti and it was a million times better than the whole wheat spaghetti. (It was gluten free, kosher certified, had fantastic texture and it was trans fat free. Name brand "Tinkyada pasta by Joy". FIber=2 g Sugar=0 g Ingredients: Brown rice, rice bran and water. www.tinkyada.com )

Anyway...


I barely used any of the spaghetti 1/2 cup serving, but I use tons of the tomato based sauce, which consisted of ground beef, tons of egg plant, zucchini, red and green bell peppers, garlic, onions and mushrooms. TO DIE FOR!! (I'm actually eating it right now too!)

I didn't even use any olive oil. Just sauteed the veggies with the ground beef "juice"...there wasn't much though b/c it was on the lean side.

Eta, I also topped it with parm cheese.

Also, this is a bit more expensive and probably harder to find than ww pasta. I still use ww pasta, just wanted to try the brown rice stuff, glad I did. :)
 
BBH, we have switched to that brand and guess what? no one even notices that it was rice pasta! :P
 
I baked a sweet potato.

I cut it open, and put a bit of real butter open.

I ate it.

Speaking as a converted former sweet potato hater, spice that thing up! (Thanks to Wifezilla & Dace for convincing me to try them :D )
I really, really, really, really dislike the sweet dishes from sweet potatoes, pie, casserole with the marshmallows :sick
Don't like them plain either.
But, I love them spicy with some butter, garlic, cayenne, sea salt & maybe some sauted onion. Smooshed up like mashed potatoes or like home fries/skillet potatoes, either one.

I love baked sweet potatoes, but that is usually with butter, cinnamon, and a bit of brown sugar. :D

I made the kids scrambled eggs with ham & cheese this a.m. I had about two bites while choking down my coffee and making lunches. For lunch I finished some cucumber salad I made for diner last night. I figure it counts. Dill, cuc's, Daisy sour cream and vinegar. Oh, poop I think ther was a bit of sugar in the sauce. I will leave it out next time. I also ate two handfuls of nuts.

I did improve my 7yo dd lunch a bit. She had sliced cuc's and carrots with ranch. Cubed ham and cheese bits an apple and ???? I forget what the last item was. Oh a yogurt.

I did go to my health food store where I buy most of my veggies. I bought...
Fresh lettuce Green beans
cucumbers a spaghetti squash
tomatoes carrots for snacking
cantaloupe
watermelon
apples
aged cheddar, small piece(major splurge)
heavy cream(going to add vanilla and try to sweeten for coffee)
Oh I also bought nuts, cashews and peanuts. But I do remember reading somewhere that peanuts were evil. Any input???

I guess I just need to start planning meals around our veggie choices. :idunno

I know right!! It tasted like the real stuff!

I just bought organic rice flour hoping to make my own pasta! I'll keep you guys informed.

Tonight we are having that slow simmered round steak again with a tomato based simmering sauce. Tons of veggies added in the end. Side salad.
 
I'm chiming in late here, but I have to agree with what others have said. Back in the winter, I had gained some unexplained weight, which in itself is not new for me. As always, it was my thyroid that was to blame for the wight gain. This time it was about 20 lbs. I went to the doctor, got my meds and levels balanced, and decided that I really needed to lose the weight. I joined fitday and used that to track what I ate. I never really followed a diet, but if I had to pick one that was closest to what I ddi, it was the " eat fat get thin" diet. BAsically, witht he help of fitday, I kept my levels in check with :
Carbs 10-15 percent of calories
Protein 15-25 percent of calories
Fat 60-70 percent of calories

By doing this, I had to basically get rid of all bread, pasta, rice, quinoa, and potatoes. I ate full fat everything, and ate lots, never hungry.

this diet is the easiest thing ever. BAsically, I have never dieted before, since none of them ever made any sense to me, --that , and I didn't really have much to lose until recently. If your goal is to lose weight, you need to seriously lower the carbs. Also I just want to note that I do not exercise. I hate exercise, my "exercise" consists of working around here, tending to animals and garden etc., and an ocasional walk and bike ride, which will increase in the summer months, as well as horseback riding, which will get my inner thighs back in shape :P.

IMO what Dace and Free say makes total sense for eating healthy, but for losing weight, I would seriously lower the carb intake, if that is your goal. If it is just healthy eating, then..... ;). Until you lose the wiehgt, I would nix the pasta, and honestly, the sweet potatoe (although it is better than a russet)

Of course, over the months I have cheated and not felt guilty about it, ( actually happy when I descovered the gluten thing), but honestly, everyone around me is impresed with my weight loss, and I am happy too.

IMO, I was always a fairly healthy eater, but I can onestly ay tha I am eating healtheir now than I ever have. and veggies do get boring once in a while, but I have learned to mix it up a bit. with summer coming, that should be easier.
