Pickling Eggs.

So, in an attempt to force 'real life" back on myself. I have been playing in the kitchen. Today, I am refrigerator pickling eggs. Specifically Beets and purple eggs and a hot habanero egg and onion combo for my sweet husband. In my search for recipes I found that some are shelf stable and some are most certainly not. Malt vinegar seems to be the common thing found in the ones that are shelf stable. Anyone got any ideas for something other than malt vinegar and still having a shelf stable egg?

Timely question! I was just thinking about pickled eggs and them being shelf stable. I've got quail eggs coming out of the wazoo, and I usually make refrigerator pickled eggs. Curious to know if anyone actually cans them to be safe to sit on the shelf.

Carla Emery's Book the Encyclopedia Of Country Living has a pickled egg recipe that is canned. I did this last fall, but I haven't tasted them yet. They look good though.
We've just had plenty of eggs from our chickens all winter.

FarmerDenise thanks, that book is on my list of books that I am getting. That and Wild Fermentation just got bumped to the top of the list for this next pay day :)

In the mean time, I found this .. http://kuntzfamily.com/recipes/pickled_eggs.shtml . It calls for LOTs of eggs.. but I think I can dose down the batch to just try like a dozen eggs then use the rest of the pickling liquid for other fun stuff. My sweet husband adores very hot things. So, I have found that pickling veggies with habanero is a great way to get veggies in him with no fussing :)

NOt that this helps but I like to put peeled boiled eggs in dill pickle juice and let them soak a few days, sooooo very good.

Thanks so much for this! We just got our first chicks 2 days ago and this site was recommnded to me on Facebook - great site! I knew you could freeze eggs but was also looking for a canned egg recipe.

I just looked this recipe up (I have the book from the library and it is due back today :( )
