Carbs -- boils down to limit all the tasty things. :lol: Sugars -- cookies, cakes, rices, noodles, breads, creamy veggies -- corn, beans, etc. Yep, they are the main weight & insulin problems. There are others but, hey, they pale compared to these.

Since we all GROW foods, no chems, mainly heirlooms, we get a much, much better end product. The GMO things really do change the nutrition and the actual way our body systems can/do process the foods. I have the normal seed porn catalogues here and let me tell you, it's a challenge!!! They do a great job with the pictures & descriptions. I just do NOT need to grow three types of cauliflower (white, yellow, purple :rolleyes:) but, so pretty. It goes on a "wish list" and I wait a few days to let myself take control again...then may buy. Helps to limit things. Still need to buy pimento & paprika pepper seeds. Since none found local yet, will need to order -- then other things jump on that order :cool: I did buy some Broccoli Raab -- like the brisker taste of the leaves, no waiting for huge heads, great stir fry -- some Bok Choy & savoy cabbage (already had seed for normal heading type)..got locally so they can actually be used now, as they are cold weather type.

Delicata squash -- so ads SAY sweet potato taste. My butternuts are a little close. Do the Delicata have a firmer, denser flesh, more like a sweet potato? I think Bay grew them....anyone??

I love sweet potatoes. Still eating the butternuts I grew last year! Of course I have seed. Some are huge, another vine had smaller -- nice if you don't want 5# at once! Obviously different varieties -- seeds kept separate. Both tasty great.

OH, CrealCritter, the liners are looking to be silicone ones....high heat tolerant and totally reusable. I have a bag of them my mom bought and never used. Some are shaped like stars, hearts, etc., she just "liked" them. Kinda like seeds!

Yes I grew the Delicata. I cut them in half, scoop out the seeds and put them cut side down in a shallow pan with some water in it and bake them. A little butter and Yum! they have kept well in a bowl on the counter, still have a couple.

Bay -- how would you compare to a Butternut? I cook those about the same but they are quite moist...are the Delicata a dryer, firmer flesh? Or about the same?

The Delicata squash has an edible skin, unlike other winter squashes... but because of that it doesn't have as long of a shelf life. They tend to be small- we figure 1 squash for 2 people, or 1 each if it's playing a major role in dinner. I grew a bush variety last year- the vines only grew about 3 feet and I got a good 5-6 squash per plant. Not as sweet as Butternut, a little dryer. I made an excellent hash with diced chicken, diced onion, and diced Delicata. They make a good substitute for sweet potato because they have more fiber and thus, fewer digestible carbs.

Here's an easy low carb recipe.

Brown 1# ground meat in skillet with taco or fajita seasoning (homemade and sugarfree, of course)

Add 8 oz cream cheese and 1 cup salsa

Stir until melty :love

serve as a dip, or over chipped spinach salad, or in taco shells or tortillas for those who aren't doing low carb.

OH yum! Sounds good!

We had eggplant pizza rounds last night. Really good and extremely low carb! And - picked a batch of broccoli from the garden and steamed that. There is just no taste as good as broccoli that was growing less than an hour before you eat it!

We've been veggie heavy the last couple of days so we will have some link sausage and veggies tonight. I found a couple packages in the back of the fridge that needs to be used.

I made rutabaga fries, stir fried mushrooms and spinach and flounder fillets with a orange-ginger glaze. Desert was home made coconut jello.
