Who cares? It's delish, lol. But carbs....darn those carbs But, with some "other" type of noodle.... there's possibilities here!

Nothing inherently wrong with a carbohydrate unless you are health and/or weight challenged. DH is a severe diabetic and has to control his carb intake to keep his blood sugar under control.Carbs = carbohydrates? What's wrong with em?
Oh my gosh, is THAT what they are called?!? Our neighbour when I grew up used to grow them and share them with us. I LOVE THEM!!!! My mom used to add them to stews etc. I found some for sale here once at a supermarket, but never again since@Britesea and @FarmerJamie (and everybody else)! Every seen, cooked, or eaten a Chayote Squash? I picked up a couple at the store the other day. I've been telling myself to try new things so this is a step in that direction. I've never cooked or eaten one, but wanted to try it because it seems to fit the low carb lifestyle.
I've seen recipes that say you can eat it raw, stuffed, sautéed and even one for a mock apple pie....I'm anxious to try it.
