These recipes sound terrific. I've been eyeing the zucchini every time I go to the store lately, but they just haven't looked very good yet. I'm looking forward to my own again this summer!
It can be a challenge to find recipes to fit each person's dietary restrictions here, but zucchini fits for most! I love zucchini, tomatoes, yellow squash (and/or okra) in a pan with a little onion, garlic, and Italian seasonings! (My 18 y/o isn't very enthused...)

No diabetes here, but between the three of us: polycystic kidney disease (with cysts not limited only to kidneys), liver transplant, colo-rectal cancer, hashimotos disease, chronic sinus, chronic joint pain with osteoarthritis and a few other things has me growing our own fruits and veggies, chickens, and soon rabbits as quickly as I can (without artificial fertilizers...). Growing the stuff is much easier than finding recipes that are good for all of us but also taste good enough for everyone to actually enjoy eating!

@Britesea and @FarmerJamie (and everybody else)! Every seen, cooked, or eaten a Chayote Squash? I picked up a couple at the store the other day. I've been telling myself to try new things so this is a step in that direction. I've never cooked or eaten one, but wanted to try it because it seems to fit the low carb lifestyle.

I've seen recipes that say you can eat it raw, stuffed, sautéed and even one for a mock apple pie....I'm anxious to try it.

I have been trying to eat healthy lately. Vegetables really help you loose weight. You don't ever get full when eating vegetables.....
you just get tired of eating the crap so you stop. I lost 6 pounds last week.

Oh my gosh, is THAT what they are called?!? Our neighbour when I grew up used to grow them and share them with us. I LOVE THEM!!!! My mom used to add them to stews etc. I found some for sale here once at a supermarket, but never again since :(
