I am still working on the cheese. It takes a LONG time! This is my first attempt, and I have 10# of cheese I'm trying to do :p

I would post pictures, but my internet/satellite conflict is still raging, and it won't let me upload any pictures :(

If things continue along this pace, the butter will end up waiting!! Wouldn't think cheese would be so difficult!

DH told me tonight (during our nightly phone call) that the cost of a lawyer is a small price to pay for my de-stressing. I couldn't agree more! Honestly, I think he was just a little freaked over my bawling :lol:

I forgot about your upload challenges. I've never canned cheese. Didn't even know it could be canned!

Yes, you really can can cheese :lol:

I canned cheddar last night (I used mild cheddar - it will sharpen as it sits, so I wanted to start with mild!) I've been led to understand that soft cheese - mozzarella, pepper jack, etc. - doesn't can well, but I may try pepper jack once, just to see. I ended up with 10 1/2 pints of cheese. After changing my method (I went by Jackie Clay's canning book, but it didn't explain the melting process very well) for melting it, things went faster. I was being too cautious with the jars at first, and it took 2 HOURS to melt 4 half pints of cheese! So, I didn't get the butter canned yet, and spent today picking up hay, chicken feed (and trying to find a better deal) and cow treat. When I talked to DH tonight, he whined because I haven't canned him up some Velveeta (Ugh! Yucky processed cheese :sick ) yet, so I guess that will be the next item on my list. The big baby! :gig

Hmm... Just realized Velveeta is soft cheese too, but is supposed to be OK to can...

Then, when I clear all that out, I WILL CAN BACON! I have all the stuff I need and we know we like canned bacon, I just need to make myself do it and get it out of my freezer!

I had needed the proper paper to can it up with, but didn't want to spend money on it. Recently, I received a purchase in the mail with the perfect paper, perforated at exactly the right length for my purposes, so now I just have to do it! ;)
