Talk to me about Canning.....I am a newbie!

Well I have jumped into this canning thing. I LOVE it! I canned for the 1st time tonight (not counting freezer canning)!

Tonight my husband and I made Raspberry Jam. It was pretty easy to do. I think it turned out great! I am pretty proud of myself. I can't wait to taste it!

Aren't those rows of gleaming jars so beautiful? You just have to leave them out for a couple of days to admire them.....kinda like a bouquet of flowers.... :lol:

Congratulations on your first canning! That is very inspiring. :celebrate

I did freeze squash today. In fact, today was the first time that I have ever frozen anything out of my garden so it was an accomplishment for me. lol

Congratulations! Doesn't it feel wonderful to put up things that you grew?

I just found this thread but I too LOVE to can.

Your first attempts look great! :thumbsup

In addition to the Ball Blue book you should try to find a book called "Stocking Up!" It is full of preservation ideas and you will learn a lot but stick with Ball for the latest recommendations on canning times, pressures and temperatures.

A canning binder is essential! I even keep the recipes that did NOT work, with notes on how bad they were. So I don't try them again in five years, forgetting the dismal failure. Like the idea I had of canning peppers, onions, and mushrooms together for dh, who likes that combo in his morning eggs. MUSH! :rolleyes:

Yeah, it was nice. My next preserving project will probably be canning tomatoes.
