TanksHill I am Celiac and my D2 is also - to the extreme. A tiny bit of gluten sends her into anaphylactic shock and to the ER! I just throw up and have about 48 hours of diarrhea.
The main thing to understand about Celiac disorder is that the body does not absorb nutrients and minerals properly. When you lack the proper minerals things go perfectly hay wire! Our bodies are complex systems and minerals keep things working all over the body.
Some personal examples...
My body does not absorb salt properly. This was making my blood pressure tank and causing the little veins in my head to collapse which in turn was giving me migraines!
My body does not absorb iron properly. This was giving me anemia, which is to say there was not enough iron in my bloodstream to properly carry oxygen to my body. The result was fatigue and occasional blackouts when under a strain. Since the oxygen levels were low the CO2 levels in my brain would elevate causing me to feel foggy and not be able to think sharply. (?ADD?)
My body does not absorb B vitamins properly. This is probably what is causing my neuropathy in my feet. The sensory nerves are losing their function.
I also have an auto immune disease - psoriasis - which has now been linked to Celiac. They don't know much about that link just yet, but the psoriasis causes arthritis symptoms similar to Rheumatoid Arthritis. (The psoriasis lesions are in my joint capsules!)
I am also hypothyroid. I know that lack of certain minerals can cause thyroid conditions.
I used to have chronic acid reflux till I quit gluten. Now it is gone.
My mom died at 50 of esophageal cancer and my grandma had bleeding ulcers and numb painful feet until she died. (GLUTEN?)
I am now convinced that the majority of my health problems are the direct result of eating something (bread/wheat)that was slowly poisoning me almost everyday of my life for 44 years.
Testing is a simple blood test, so why not get it done. I think your SIL is on the right track.
Living gluten free is difficult. Living sick from lack of nutrients is also!
