How good would it be to be able to buy authentic ancient wheat!?

It's possible to get them. I know someone who uses kamut and einkorn to make bread. Bob's Red Mill probably carries several ancient varieties. They seem to carry everything

the various older grains are still available - obviously often at a higher price since they are not produced in such large quantities.

Another loaf cooking right now. Maybe the bread machine wasn't a good idea. Hubby gets a bit too excited.

On the plus side, I can manage to use it mostly one handed. Tested this morning to check.

I can't make biscuits one handed so that's good.
