Well it wasnt really that exciting but it was frustrating! :he

We went to the courthouse to get my id for the airlines, they had to have my ss card and my birth certificate......so we went home got my ss card. But couldnt find my certificate. Looked in the lock box here, then went to Grans and tore threw her filing cabinet. Then went to aunties lock box at the bank we found every birth certificate EXCEPT mine, then went to Dads hous on the other side of the county and searched his house. Finally came home and mom looked in her nightstand and found not one but two coppies of it! :he

Here is a pickle/pickle relish recipe

14 Day Sweet Pickles
Into a clean stone jar put two gallons of cucumbers washed and sliced lengthwise. Regardless of size, cucumbers must be sliced or they will shrivel. Dissolve two cups of saly in one gallon of boiling water and put while hot over the pickles. Then cover and weight down pickles and let stand for a week. On the eight day, drain, then pour 1 gallon of boiling water over them and let stand for 24 hours. On the ninth day, drain and pour 1 gallon of boiling water with tablespoon of powdered alim over the pickles and let stand 24 hours. On tenth the day drain again, pour 1 gallon boiling water over them, let stand 24 hours then drain.

For the pickling mixture, combine 5 pints of vinegar boiling hot, 6 cups of sugar, 5 tsps of celery seeds, 3 tbsp of broken cinamon sticks. Pour this over the pickles. Drain off for three mornings, and add a cup of sugar each morning, reheat and pour back over pickles. With third and last heating pack chopped pickles into sterilized jarcover with reheated mix and process 5 minutes in a boiling water canner.

I hope that helps! This is what she does!

Bye guys! Im gone for the week!

:hugs

Thanks for the recipe youngun! :hugs That stinks about your BC  I have soooo done that with the kids though, and not been able to find them when I needed them a time or two ;)

Well I got my appointment out of the way, got home, and went out to the garden. There are cukes everywhere...and now I have to put those up. Going to try that recipe and see how it turns out :D I sooooo just want to go to bed!! I have so much to do though. I need to get the butter done, relish going, tomatoes dried, kitchen rearranging/cleaning finished, and then we're taking a load of chickens to the sale tomorrow so this afternoon I have to sort fluff butts. Hopefully we'll get rid of most if not all of them, because they're getting harder to feed on a shoestring budget. Wish DH could find a job that he could get better hours. THIS is frustrating :/ Anywho...off to work in the kitchen again! Ibuprofen is on the horizon :th

I don't like raw cucumbers. They taste like watermelon rind :sick Maybe it's an acquired taste, but I never liked them. :hu

I love pickles except the bread and butter pickles, they taste funny to me. My mother LOVES the bread and butter pickles though, so I'll have to make her some of those :)

I don't like most sweet cuke relishes. I like dill :)

If it's sweet, it has to also have a lot of heat, and fruit. LOL.

DH loves the spicy dills. I am partial to dill myself, but we use sweet relish in food prep a good bit.

Since I'm just getting into salsas, relishes, and fermentation, I'm kind of free-for-all experimentation lol.

It's great. I figure I cannot be more than a Journey Man Chef (my Imooto's rating for me) if I cannot even make all my own foods. Pffff! :D I also need to learn more about cuts of meat, grilling, better knife work, sour dough, .... well, I have a list. A huuuge list. :)
