Yesterday's cannning:

6 pints of peaches from my tree and 1 jar of hot okra pickles.

Today's canning:

2 quarts of tomato juice, 10 pints plus 4 half-pints of salsa.

Plus those pepper flakes will keep a LONG time. We fill the dispenser jar and then freeze the rest in a baggy to stay extra fresh. ;)

Do you have to slice all the peppers first to dehydrate them or is there a faster way? Slicing takes so LONG!

11 quarts of garlickly Dill Pickles (5 just gherkins, 6 gherkins and a few cauliflower florets in each jar). :)

Not sure how small your looking to cut stuff up. But, I have something called a Nicer Dicer. I use it for ALL my dehydrating. Makes everything nice and consistent size.

I often see chopper things at the goodwill.

No canning for me today. But I did re organize my canning cupboard. I am having second thoughts about the big shelves in the garage. I would prefer everything in one place and in the dark. So I am trying to move out pantry items and buckets and move in this seasons jars. I might even convince my dh to build shelves on the opposite wall. It would make for a really tight space. But might work.
