beans beans beans, forever beans, not complaining just saying, i have been putting up tomato sauce ( thanks for the hint of freezing them till i have enough for a large batch and they do peel themselves with no blanching) okra is coming in in droves, lovin it by the way and started drying some herbs on the drying rack today since its hottern hades and a good breeze blowing. second round of squash planted a few week ago will be ready by the weekend if i can hold off the squash beetles ( :rant HATE THEM).

I am buried in apples! I have been making apple sauce to freeze (they always explode when I can them), putting them in the dehydrator, and just quartering and coring and throwing them in the freezer for when I feel like dealing with them. Any that are too full of holes for my use go to the chickens. They love 'em!

I am going to be you in about 2-3 months! Our apples come in the fall. This is my first year to have an apple orchard, so I may have some questions for ya.

Tuna, Tuna, Tuna!
New guy here, I am an Oregon buy and this time of year is full of wonderful canning opportunity's. The Albacore are off our cost, salmon in our rivers, Blackberry's, huckleberry's, all the garden produce, Man a guy can hardly keep up. Last night caned 24 1/2 pt's and 9 pt's of tuna (Albacore) The day before 3 quart's BB-Q sauce. Makeing Zuke Pickles tonight. Man, I love this time of the year.:D

ok folks the time has come.

As some of you may know I made a connection with a young man who's family owns an organic heirloom tomato farm near where I live. We bartered eggs for tomatoes and got to talking....

So what it comes down to is I am being delivered 5 cases of quarts, onions, fresh herbs and 400 lbs tomatoes today.

I am not really sure what 400 lbs of tomatoes look like but I guess I will find out soon. :barnie

I explained to this young man I was no expert and just used my basic whole foods recipe. he really did not care. he is trying to turn waste into a marketable product. heirloom tom sauce for the farmers market. he told me to just do what I thought was best. Kinda scarry.

So, do you think I should work for tomatoes or money??? I guess it all boils down to how long it takes me to get through these and weather or not they sell. Who know. His dad the company owner also asked if I could make tom jam. I told him my mom had suggested the same thing and I would whip some up no problem.

he said he knows I will probably have more tomatoes than I need and I should feel free to eat, keep share the rest. So somebody fill me in on freezing the tomatoes and what to do. Chop, bag, what?

I hope this all goes well. If I log on at 2 am pulling out my hair will you all come help me???

Okay, that is just totally awesome !!! 400 pounds...and I had trouble with 40 ! I love it when these kinds of things happen.
