That means you have to PEEL 400 pounds of tomatoes! Wow.

One thing to remember they freeze great! AND when they come out of the freezer as so many hard marbles all you do is rinse them and off come the skins!

I hope you have a while before market!

So far today ... applesauce 5 pints, green beans 5 pints, beets 3 pints, and carrots 4 pints. Also 2 pints of beet pickles!

You know, I just realized something last summer. You don't HAVE to peel tomatoes, especially organic ones. It just dawned on me that I can all sorts of things that I haven't removed the surface from, so why not tomatoes? Let me tell you, it made my stewed, sauced and salsa'd tomatoes SO MUCH easier!!!

Yep--Diced, whole, salsa, sauce, soup (skins strained for the soup). It was a blast to not use any electricity, time or water to deskin tomatoes last year!!!

Have fun with your awesome and daunting job :)

Don't the skins "clog up" the sauce? My tomatoes are organic too, but grandma taught me to remove them to make a more palatable smooth sauce. I will sometimes dice it up in salsa or something chunky, but I am a peeler.
