I've got 20 lbs of chicken legs/thighs to do. Mostly because a couple weeks ago I was trying to count what I have and couldn't believe I didn't have as much chicken as I thought I did. However - DH had put some away for me a while back and he later stacked empty jars on top of full jars. I didn't see two cases under them. ARGH! Combine that with a good sale price and here we are. I think he did it on purpose, lol! But, I'm going to make a big pot of soup today since we will have the son and d-i-l over this evening. Think I'll make chicken enchilada soup. That'll use up some of that chicken so I don't have to can it all. In fact, I think I'll make a HUGE pot of soup and DS can take a bunch home with him. :lol:

It was really good. My huge soup pot came in handy. Between the four of us there were five full bowls eaten for dinner. I sent home almost 3 qts with DS and I still had a quart left for us! Love that soup!

The wife found this template for inventory tracking. She logged jar each with a "/" and then will use an "\" to make an "X" when used up.
