Ladychf2k, I am planning on ordering Pomona through my coop in a couple of months. You can get a pound for $42.90. The wonderful thing about it, I've read, is that you don't have to use such an obscene amount of sugar in your jams and jellies. Saves money and makes a better tasting product!

That's what I liked, it uses the calcium instead of so much sugar to gel. There are specific recipe instructions in the box, but also tips for changing the recipe and making up your own.

Besides, the first ingredient in MCP pectin is dextrose. Pomona is straight pectin.

I beg to differ Ldychef! You most definitely ARE a risk taker! Look at some of the things you have canned over the last year. You are cutting edge for sure. :cool: :D

I do NOT think you are in peril. :gig I am just referring to the MANY different recipes that you have in a jar! Most of us can tomatoes, green beans and corn.

You can gourmet concoctions:

Peach chutney, banana butter, merlot jelly, cream of soups, beef stew with red wine, brushetta canned tomatoes, pepper/patty pan/onion & fennel pickles, and "Summer in a Jar" - Not a risk taker? :lol: I beg to differ! :D

Well, you are very kind to say so. I actually have been cooking in one form or another for 50 years. It is how I express creativity, and love. I guess this is one more expression, then. We will see how it goes in the morning when my family receives their baskets.

For me today 4 2 oz jars of roasted tomato seafood cocktail sauce. Seems like a little dab o' something, but better than having too much sauce go to waste!

Today, 4 quarts and 3 pints of sweet potatoes that were 20 cents a pound. I have a lot of sweet potatoes now. Some canned in syrup, some in apple juice, and today's in plain water.
