Thinking about canning up some chicken for the fam to use while I'm in the hospital and recovering from my surgery. I definitely need to get another really big pot of spaghetti sauce canned. Need to plan for three weeks, hope it's only two weeks but get four weeks worth of food that's quick and easy for Greg and kids to fix-just in case.

Hello all, hope you all are having a wonderful winter, it is cold here today in Oklahoma, I canned 9- 1/2 pints of Roasted Pineapple,Onion, Bell Pepper,Habanero Marmalade last Saturday, It turned out a little runnier than I wanted, may need to add more pectin next time. This is my own recipe, tested it on about 15 people at work, all but one loved it, it is great on meat, I like it on Summer Sausage and Beer Brats myself. Lynn :cool:

Yesterday: Seven pints of cubed turkey breast. Gave the dark meat to my mom. Simmered stock all night.

Today: 5 quarts stock. Sweet potatoes were 20 cents a puond this morning at Winco, so I have 8 quarts lined up to go in the canner.

Bought three clearance five pound chubs of ground beef 7% fat, $4. Canning meatloaves this afternoon.

I'M SO EXCITED! just broke out the new canner and i'm setting up some pork broth!

will be working on simmering that turkey all nite. i cant wait

:)

but i think i need more jars...... hum... with all this snow that might be a problem....

I did my first jalapeno jelly this year. I Tried to make Loquat jam, it did not set. So I found a jalapeno apricot recipe and instead of sugar and water I used my Loquat syrup. It was to die for. I am going to try to make it again in the spring. But much more!!!

I only have two jars left. I am hiding them. Shhhhh!!!!

Picked up two bags of potatoes at 77cents per bag. Canned them into 13 quarts of diced potatoes. Not bad for a buck fifty!!
