What are you DEHYDRATING today?

Don't be embarrassed. :) I am thinking I will probably use a kit or something the first time. I'm not totally uber confident since it will be my first time, so maybe I can build some confidence by using a kit.

Waiting Wifey for the summer sausage recipe :)

Slices of lemon for lemon ginger tea, and some beautiful young leeks that I got 5/$1 at the farmer's market.

I'm a wee bit embarrassed to admit we get that seasoning mix from Wal-Mart (ducking again!) and mix it with ground venison, then squirt the goo out a jerky gun onto our dehydrator trays.
I have been doing jerky off an on for years and there is NOTHING wrong with using a kit. I do all the time. I haven't dug enough to find recipes I like for jerky or summer sausage. Eventually maybe...

And after grinding 170 lb of venison by myself I am to tired to think so open a pkg and dump and mix....YIPPY.... :th

Sooo don't feel bad about using mixes.... That is why they make them!!!

:thumbsup

Onions on big sale, dehydrating 20 pounds of browns and 10 of reds

My brother makes a great "whole-meat" jerky, though. I think he just marinates it in his favorite herbs and spices super long to let it soak in, then dehydrates. I'm thinking dried garlic, minced onions, pepper, salt, some cayenne or chipotle would be a good start. Maybe some Worcestershire? Or maybe I'm just craving Chex Mix. :D
I use whole meat and slice it thin, then I soak it in "Lowry's steak and chop" marinade - its the best darn jerky ever!
I vacuum seal it overnight if I can stand to wait that long, and then pop it in the dehydrator for 4 hours.

How do you prepare your lemons for dehydrating? And whats your tea recipe? Thanks!:hide

Thanks for asking, Delia.

All I do is wash them and take off a bit on each end so they sit flat. Then run them through the slicer on the food processor and let Excalibur do the rest.

I do the same with unpeeled ginger.

So, when my tummy is complaining, I put a slice or two of lemon and a about half that amount of ginger slice in a cup and add boiling water, let it sit five minutes or so, and reheat if necessary. I don't had leaf tea at all. I have thought of adding chamomille, but I need to grow some first !

Every pay day, I try to take $20 and spend it on items to stockpile. Sometimes it's dollar store hair products, some days it's clearance priced meat at WinCo. Today, it was one pound bags of frozen veggies that I am dehydrating for long term storage. I have been using my dehydrated mixed vegetables in soup mixes for Christmas gifts, so I was heavy on them today. But I also have peas, carrots, corn and broccoli.
