BBH....can you please share your apple slaw recipe? Sounds like something my kids *might* consider eating.

Apple and Cabbage Slaw

2 tablespoons red wine vinegar or balsamic vinegar
1 tablespoon apple cider vinegar
1 tablespoon honey
1 tablespoon spicy or Creole mustard
1/4 cup extra virgin olive oil
2 medium unpeeled Gala, Red Delicious, or Fuji apples, cored, quartered, and thinly sliced crosswise (I use the tart apples from my orchard, kinda like granny smiths)
2 tablespoons fresh lemon juice
3 cups coarsely shredded red cabbage
2 cups coarsely shredded green cabbage
3/4 cup dried cranberries
3/4 cup pecan halves, toasted, optional
salt and pepper, to taste
Preparation:
Whisk both vinegars and mustard in small bowl. Gradually whisk in the honey and olive oil.
Toss apples with lemon juice, shredded cabbage, and dried cranberries. Add dressing and toss. Add salt and pepper, to taste. Stir in pecans, if using. Refrigerate the salad and toss again before serving.
Serves 6.

I follow this loosly depending on what I have in the fridge. I love it with the pecans!

For dinner I pan seared pork chops, pulled them out of the pan, added chopped shallots, good glug of ACV, a large spoonful of Dijon and a splash of chicken stock. replaced the chops and simmered for a bit. Swirled in a pat of butter before serving. Absolutely delish! Added roasted sweet pots (and regular for everyone else as well)

Hey Okie, will your family eat sweet potatoes? I've found that once I convinced my dh that orange was prettier than white he's okay with that as a substitute. They're lower than regular potatoes on the glycemic index and have more fiber. I substitute them in all of my casseroles and stews. I also love them mashed with butter and honey for breakfast.

I read the quiche thread last night so I made quiche with smoked turkey, sharp cheddar, fresh broccoli, fresh zucchini, celery, garlic, onion, fresh rosemary and fresh thyme.

Quiches sounds very yummy!

nope, they won't eat sweet potatoes.

I tried spaghetti squash with meat pasta sauce today....
... um... not so much.

I like bakes squash, family doesn't.
If I don't even like the spaghetti squash, there is no way it will pass for a dinner here.

that apple cabbage slaw sounds pretty good.

Tonight is chili made with tons of onions, red and yellow bell peppers, garlic, ground bison and (lacto, long-soaked) black beans.

Topping it with shredded cheese, yogurt and green onions. It will probably be for dinner tomorrow night too. :D

Was thinking grilled tri-tip...but it is already late in the day and We had late snacks so maybe just a cheese & fruit tray and maybe some artichokes.

oh we LOVE doing a fruit, veggie, cheese and cracker tray for dinner. sometimes we'll throw in some shrimp.

it's like we've completly lost our manners. we eat off a huge platter, and eveyone (there are only 3 in our family) just grab what we want.
