I've never used coconut milk to cook with. I LOVE coconut, but the family isn't as crazy about it. Does it make your soup taste coconutty?

Coconut milk lends a mild coconut taste, I up the flavor by using coconut oil to saute. I love coconut flavor in any winter squash recipe, like it in a thai shrimp soup too.

I took some pork chops out of the freezer...not sure what exactly I am going to do with them yet. I have some brussel sprouts to roast up and maybe some sweet potatoes.

We just finished off a baked chicken for lunch. I usually toss the carcass, but I dumped the leftover veggies and the carcass in a pot and boiled it for a few hours. Yummy broth! I put most of it in the freezer, but the rest is for soup for dinner.

Maybe pumpkin soup? I haven't made any this year and I LOVE it.

Have a house full of girls tonight, all three granddaughters are spending the night. So, am making panko coated chicken fingers, mashed potatoes and corn fritters because at grandma's house you don't have to eat healthy.

I love bone broths! I usually let mine rip in the pot for 24 hours add a glug of apple cider vinegar (in the beginning)...

Tonight it is going to be a biggy tuna salad on top of a pile of greens. Add some creamy dressing and sliced black olives and tomatoes.

Changed my mind I need something warm. Tuna patties instead with cheddar cheese and sour sliced apple slaw.
