We had smoked chicken thighs and fresh piggy hams done in the smoker last night. It was wonderful!! Had corn and black bean salad to go with. DH can't eat that carby salad very often, but with the fiber in the black beans and adjusting the recipe and using only half the corn he was able to enjoy some. Helped that his blood sugar was very low and he actually needed some carbs and fiber.

I couldn't wait either....had chili for breakfast! 😁 nice big bowl of protein & fiber that lasted me all day. Guess I'll have bacon for dinner -- maybe some brussel sprouts in that pan, after I pour the liquid gold drippings into a jar. Yeah, sounding good. ;).

We had ham for Thanksgiving. Finished that last night.

I brined the turkey I bought, spatchcocked it, and it's now on the smoker. So we'll be having turkey tonight and hubby will get sandwiches this week. If it turns out good, we may be taking one to Mom next year.

Half the bird will be going in the freezer immediately.
