Add more water as needed. After it simmers today, strain and take off any meat you can and add that to the strained stock. Then you can spice it and make soup if you want of baggie it for the freezer.
Yay! I'm doing something right by guessing! :D :woot So how long today should I let it boil? And I discovered that my back burner has a lower flame than that front burner. So, we apparantly have two regulars, a low and a power burners :D

For the record, processing a chicken is MUCH faster than processing a duck. Those darn meaties practically process themselves once you get em dead.

You will get even better stock from the standard chickens.
Just remember. Do not Boil. Always Simmer.
A lid can help with the water loss.
Personally, I make it in crock pots now. The high setting simmers just right.
