Crookneck squash.

Okay, so we have a plethora of squash and not much else right now. How many different ways can we come up with to eat crookneck squash?!?! I usually just fry it in bacon grease with a bit of breading. I'm Southern, we fry things...so...what else is it good for, and how else is it good? I seriously haven't a clue :lol: Help... :lol:

Cut it in half, seed it, and fill it with meaty cheesy goodness and bake?

That sounds good :drool I do that with acorn squash and it is really good that way. :D

I got this off of Allrecipes.com. You can make the biscuit mix instead of buying store bought.

I've never made it, but I plan on it once my squash comes in.


Squash Casserole Side Dish

4 eggs, beaten
1/2 cup vegetable oil
1 cup biscuit mix (dry)
1 (4 ounce) can chopped green chiles, with juice
1 medium onion, chopped
1 clove garlic, minced
2 cups grated Cheddar cheese, divided
4 cups coarsely chopped summer squash or zucchini or yellow summer squash

Directions

Combine eggs, oil and biscuit mix. Stir in chili peppers, onion, garlic and half the cheese. Stir in squash. Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Bake at 350 degrees F for 40 minutes; sprinkle with reserved cheese and bake 5 minutes more.

I did the casserole tonight nd it was a HIT! :woot Will do the stuffed squash tomorrow :D Thanks ya'll :hugs

If you have alot, what's the worry? They were actually good --I have made them three times now. They do not taste like brownies though, they were fluffy.

I'm glad everyone liked it. You just can't go wrong with cheese and fresh veggies. :drool

I feel more confident in serving it to my brood now :D

I'm also thinking of using a buttered crumb topping alternately with the cheese topping. More variety that way LOL
