Good for you! I am always most efficient when I am busy with lots of commitments.

On the cookie front....you can make up a batch and roll the dough into little balls and pop into the freezer....then pile them all into a ziplock bag. Whenever you want hot out of the oven cookies, just pull a few out of the freezer and into a hot oven.....voila! A little kore time upfront but super quick to bake.

Now I gotta run get the laundry out of the car and get it done for the week! My new thing is doing my laundry at work on Sundays. Hey, it's someone else's water and electricity!!!

Here's my recipes for the week:

Turnip & Blue Cheese Gratin
BBQ beef over sw. potatoes
sw. potato and feta frittata
egg & spinach casserole
bbq venison ribs


Hmmm... need more veggies.
I have to buy spinach so what doesn't go in the casserole I'll make into a salad, some carrots, and some steamed zucchini. That ought to do it...

Oh, and tomorrow I'm going to bake a couple of dozen cookies for MyT Man and freeze some dough balls for baking later quick & easy.

Yesterday went to The Re-Store and picked up 6 doors for under $10 that I'm planning to modify for a chicken coop. I need to come up with a design today and then hopefully build it next Saturday so I'm ready for when the weather turns.

I don't know how it got to be February already but I've also got to get out and get the fruit trees pruned.

Worked on taxes yesterday on-line and was ready to pull my hair out because they don't allow multiple scenarios. May end up just taking it to the accountant. We'll see. I just don't understand how doubling our withholding amount this year results in owing twice as many taxes :idunno. I don't mind paying what I owe but this is crazy.

Feeling like spring around here! Snow's melted and we saw the sun yesterday! Still no chickens. Maybe this weekend I can get the coop built.

Last night the neighbors invited us over for an "old-fashioned" dinner. We had shucky beans, cornbread, slaw, and fried taters. I offered to bring dessert so in keeping with the theme, broke out my well loved Dutch cookbook from the 50's. Thumbing through it and saw a recipe for old-fashioned vinegar pie. Sounding intriguing so told DH what I was fixing. He wrinkled his nose!

Dinner was great and the pie fit right in. Sort of like lemon bars in a pie but not as lemony. Everyone loved it. Other than that, time just seems to keep marching on.

Last couple of weeks I have been really feeling worn out. Nothing has really changed as far as schedule or eating habits but just feel like I'm fighting something. There are major problems at job #2 lately and that's not helping. Hope to perk up soon. Hopefully the spring weather will help.
