Goat's milk mozzarella-YUM!!!

A friend from work bought herself a cheese making kit and today we got together to make our first batch of mozzarella. I'm hoping that DH likes it so much he'll be talked into the dairy goat idea. I think we're going to have to try more of this! We used raw milk that another coworker gave us. It is better than any mozzarella I've ever gotten at the store!

That's one I definitely want to try too. I found a recipe that said you could use storebought milk. So it's on my to-do list :lol:

This kit had directions for raw, organic and regular store bought milk. We used raw because it was given to us free. The directions had us pasteurize it so I think to save time, if I was to do it myself I'd just buy organic whole milk.

Eventually I want to use "real" milk, which is why I got my doelings, but 1 1/2 year is a long time to wait for my "real":lol: milk

Did you make ricotta with the whey? Just heat it to 200 degrees, and strain. Voila! Ricotta!

Mozzarella is a thermophillic cheese, as such, the process of making it pasteurizes it. So you could start with pasteurized milk....but not ultra-pasteurized. That won't work, as the calcium molecules are so damaged it won't make cheese. Nor will it make strong bones!

If it doesn't work, it may be that the brand was over-pasteurized. Worth a try, though. Once you have your own dairy animal, it won't matter. Keep making cheese, it is a great selling point to dh's everywhere. The way to a man's heart is through his stomach!!! Also, flashing him now and then doesn't hurt....with the camera, silly!

LOL, he ate some, he loved it. I will see what the Willimantic Co-op has for goat's milk. If they have any that isn't ultra pasteurized I may try that. Maybe it will be so spectacularly good that he will rush out to buy me two dairy goats!
Hey, what can I say, the Sox just won. I'm feel lucky!
I did save all the whey but didn't have any time to do anything with it. Do I still have time??

Hint....skip the goat's milk for now. It is a bit trickier to work with and expensive!!! Just get some cheese into him and then get your goat!

I may have a doeling for you, who knows! I say Mya has three and Ginger has one....no one else here wants to join the pool....except my dad, who agrees with me, except he says Mya has twins.

Tip for cheater brie - make your mozzarella with cream substituted for part of the milk. I didn't skim some raw milk one time, and that particular cow basically milks out half and half, so voila! quick and easy runny brie.
