So true! I was just talking about this with my husband and parents. After eating mostly organic for a while now, I trully cannot stand the taste of unreal foods. My husband won't believe me, but I think white bread is disgusting! I would have to be in danger of starvation to eat it (except for really well-made French or other artisan white bread). We bought a $5 box of cookies for a school fundraiser (all homemade), but you could just taste all the fake crap in them, and we threw most of it away. I love how sensitized the tastebuds get :)

P&V: piss and vinegar. Sorry, not polite, but basically just lots of spunk and pep.

I think part of the problem is our modern lifestyle - we are always working, rushing here and there; get home an hour before bedtime - who has time to prepare a healthy meal? It can be done but it takes planning, preparation, and work. Some people struggle with this. Would I rather have a home cooked meal every night? Yes, oh yes! Can I do it? No way. No time. that is the problem, I think.

Although no amount of time crunch could persuade me to down a Twinkie. :sick

One of the things that HC is missing is that most of us know that WZ eats "carbs" in the form of vegetables, as she has posted her typical meals on occasion. And most people here know that I make dessert with sugar like twice a year and it is a healthier version, not typical recipes.

Abifae, yes, today was a high carb day for me with the cornbread and possibly dessert tonight (If I ever get done with my computer stuff and get to the kitchen....if I can resist coming here every few minutes!!! :p ) and yet it is much, much lower than the SAD, and all properly prepared and good carbs. My cornbread had niacin in it! And was buttered quite thickly. When you add fat to carbs, you lower the glycemic index yet again, and make some of the nutrients more available.

HC, those who know me know that I say this with sincere kindness.....read the book, Nourishing Traditions, or go to www.westonaprice.org and read some articles on saturated fats by Mary Enig, PhD, and some articles on Dr. Price's research on traditional diets. Then you will understand what we are saying and that when we type quickly, we are not referring to the carbs in fresh spinach in the same way as the carbs in white flour products or sugary snacks.

You still don't have to agree, but you will understand where we are coming from.

We are all of above average intelligence and base our conclusions on science, not the food pyramid.....btw, it is the USDA food guide. United States Department of Agriculture. A department formed to create markets for agricultural products. So creating a food guide/dietary guidelines based on the most commonly grown crops is their goal (corn, soy, and wheat), not protecting our health. No evil conspiracy, they are just doing their clearly defined job.

It is up to all of us to take control of our own health, imo.

Part of the problem with conventional wisdom is that so many have picked out the useful portions of a study and tossed the part that contradicts their own theory. The so called Diet Dictocrats who set up the food pyramid and the low fat diet theory, have led us down a path that is not healthy, nor has been scientifically proven.

The USDA food guide. United States Department of Agriculture. A department formed to create markets for agricultural products. So creating a food guide/dietary guidelines based on the most commonly grown crops is their goal (corn, soy, and wheat), not protecting our health. No evil conspiracy, they are just doing their clearly defined job.

The trifecta...big agro, government & pharm. They are trying so hard to keep us fed that they are killing us. :rolleyes:

Also, I agree with Free.....when we are referring to carbs we are not really referring to healthy natural carbs found in veggies and fruit. But all food is rated on the glycemic index and a lot of us tend to eat on the lower end of the scale.

Edited to add- that the reason that so many of us get so adamant and passionate about this is that we have read, researched and educated our selves to the point of seeing very clearly that the 'healthy eating' guidelines are not working. If they were, our society would be getting better, losing weight and conquering chronic disease, but that is just not the case. When you really dive in to this subject you learn how and where things got off track a long the way and why conventional wisdom is what it is and why it is incorrect.

But it is something that individuals will have to take on for themselves. No one here can convince anyone else that what they have been told is healthy their whole life is wrong.....but if it were not for some far out thinking and a lot of effort to prove that conventional thinking could be wrong, we would all still believe that the world is flat...as was mentioned before. If anyone reading all of this is really interested, then read thru the many links that have been provided and do your own research.

Well, I agree that not all the gov't says is true ;) but I don't believe they are TRYING to kill us. That would screw up the tax flow! Seriously, though, we have to take some of the blame. Even if a person DID follow the food pyramid, they would probably be healthier getting 6+ whole grains per day, 5-7 REAL fruits and veggies (not French fries and catsup) and some REAL meat, eggs and dairy. Even the food pyramid advocates for whole foods instead of processed.

Just sayin'.
