So any suggestions on what to do with this duck? I have never had duck before. I'm sure a skinless, 1 year old duck probably isn't the best way to start, but he had to go regardless :p

what kind of duck?

With muscovy we grilled the breasts, really yummy. We did it carne asada flavor and teriyaki, both were good. But it was young. What if you cooked it slow like a roast with some moisture in the pan?

I used the legs for soup.

It was a welsh harlequin. Not very big - maybe 3 pounds cleaned. I'm leaning toward teriyaki and orange flavor - classic, I guess. It will be an experiment for sure :)

well without the skin you need to keep it moist somehow is all.......I was thinking of trying one of those bags you bake in for the next one.

Oh, good idea! I think I have some of those cooking bags. I'll either do that or crock pot with lots of moisture.

The weather is finally allowing us time to work. Weed pulling, avoiding poison ivy that has spread like wildfire, planting a few things in few non-flooded areas, and getting all the chicks out of the brooders and on to grass.
Gotta run a kid to school. Be back soon.

I still haven't cooked the duck - probably get around to it today. I also need to make a cheesecake and a loaf of french bread and drain my cheese and dig out some plants for my Mom.

It's coming from the neighbor who has a major infestation - and it's only in my hostas and flowers so I can't let the goats eat there :/

It was 90 here yesterday in the shade. I think I melted.
