Crazy isn't it, Dace. Something like 2 quart ziplock bags full of veggies over the course of a day. And I left my baggie at home this morning, blah.
BBH got my gears turning with her purple cabbage, we're having purple cabbage slaw tonight along with salmon/zuc/onion/bell pepper patties (With egg & fresh ground cornmeal as binders) and bacon laced green beans.

first, I'm gonna go broke with all these veggies three people have eat in a day. we're out of season so I have to buy everything.

second, I'm doing good to just get my family to veggies at all. We are from the "if it ain't deep fried and covered in gravy, it ain't good" mindset.

I'm thinking of doing a eggplant covered in mozz cheese and spagh sauce with a big salad.

We've got left over roast, buy my eggplant is getting a bit aged.
Well true it is more costly than pretzels. But if you are actually trying to lose weight, it will most likely help you to get there more quickly.

The ones I made last night are celery heart slices, zucs, radishes, baby carrots, cherry tomatos - they're on top, cauliflower & its stem, couple of small pickled chili peppers :somad couple pinches of long wheat sprouts, few raw green beans.
Next it will be small amounts of humus wrapped in purple cabbage leaves (I'm so glad I got reminded about humus, I have organic dry garbanzo beans in the cabinet, bought on sale woo hoo), yellow squash, zuc, cucumber, onion, garlic marinated in little bit of olive oil & acv with some basil, sea salt & pepper.

In my baggie today I have sliced red bell peppers, carrots, celery and broccoli, 3 grapes and a hunk of cheddar cheese. :D

"When your ten gallon hat is feelin' five gallons flat, you have a hankerin' for a hunk of cheese!" Remember that from the 70's? :gig

Hehehe, those two lines stick out in my head. My mom got a vhs & a whole bunch of homemade tapes when I was 4 or 5. I remember Timer well :)
You've got great veggies too, I love red bell peppers!

Dace, what do you have, anybody else have favorites?

Yesterday was .....asparagus, red bell, jicama, pea pods, carrots, cukes and the coup du gras...pom seeds :thumbsup

I tend to feel like a horse with a feed bag strapped to my head...working on that.
Today I am making a cuke, onion & red bell salad with a little rice vinegar and sambal ....I just need some FLAVOR :celebrate

I don't put wet types in a baggie if traveling etc. and want to munch in the car on a long trip. cukes are too wet for me....so I stay with drier types.

I love grape tomatoes. they beat the usual cherry varities on taste big time.

great thing about the camper, when traveling we just stop in a parking lot, go in and eat from the fridge...so easy. I make a big salad and have sandwich stuff for Tony and Nicole.....I just love the convenience.

remember the price of health is a factor....and the savings on the other junky stuff we don't buy......it truly is not more expensive to eat good in the long run.
