Happy 4th of July!!!!

I was up at 6am. I've done breakfast, dishes, laundry, made beds, watered the lawn and picked green beans. Vacuumed and swept. And I am still in my pj's. He he!!!

I was hoping for a load of compost today. But my dh is playing x box with 10yo son. Hummmm???? :barnie

When you did your duck did you cook a whole one and then cut it up? I tried and I had such a darn time carving it. Slippery little sucker and all the joints were in the wrong spots. Nothing like a chicken.

I think my family would eat duck again if I made it into something else. Maybe.

and that is the truth!

we found dressing ducks completely different - it was MUCH harder. honestly we kinda were scared off from doing anymore.

but

then we had the duck breast:

and now we are believers. it was just like a steak..a really good steak.

since we were The Worst Pluckers in the Entire World we skinned the ducks and parted them up. we removed the breasts just like you would on a chicken - and these meat ducks had huge breasts. then we put the parts into the freezer.

so i just thawed out a package, heated up a skilled and added some bacon fat. sizzle sizzle sizzle.... turn... more sizzle sizzle sizzle.. (about 8 mins total) than into a hot oven (400*ish) for another 8 (may have been a bit too long) minutes then let rest for 10 mins. my instructions said to cook in the oven until it reached 150*... which is about what you'd do with a rare-ish steak (ldychf help me out here....).

it was so good. if i hadnt told my hubby what it was he would have thought it was steak.

we cooked down the rest of the duck when we dressed them and portioned them into baggies. i loved the tomato sauce/duck ragu over pasta we had one nite.. then we also had the shredded thigh meat for tacos. and of course i have a pot of duck fat for frying taters.

that OD the gander had better watch his Ps and Q's b/c i understand goose is just as good.

My hubby loves roasted duck or even grilled duck, so I occasionally buy a few young plump ducks from a friend of mine. I detest cleaning them. Feathers just won't come off, billions of pin feathers, even the skin seems difficult to pull off.

Despite the fact that breast of duck is considered gourmet dining, I personally don't like duck or goose meat since it is basically all dark meat. I DO love duck eggs and I think both ducks and geese are fun to have around. It would be a VERY small waterfowl flock if I ever had one at all.

Give me one of your stinky pigs any day. Something about bacon that just soothes the soul.

I've never had duck, except maybe in Chinatown in San Francisco. But that was loooooong ago. Will have to try it someday.

Its 57 degrees cool here in Bend Oregon. Leaving tomorrow for Crescent City CA, where DH was born and raised. Brrrrr there....

yummmmmm. i think that's why i like it! bring on the dark meat!!!

that's where i had duck for the first time! i walked around China Town with a friend looking for a restaurant. he kept asking me where we were going and i kept saying "i have no idea, but i'm not stopping till i see ducks hanging in a window." sure enough, i finally found a place that did really yummy, traditional Peking duck! i was in heaven.

crispy, golden ducks hanging in a restaurant window= YUMMY!

My Grandpa was an AVID waterfowl hunter. We ate a lot of duck and goose when I was a kid. You can have my share bibliophile birds! ;)
