ok so what else happened today.


well i pulled Sienna off Miss Duck's nest just in time to have her dump an egg right on my foot.

so i snatched it up (the egg not my foot) and ran in the house to put it in the incubator.

to be sure, Sienna is the worlds most perfect chicken. she is heavy in body, a great little layer, and is kinda broody (i broke her on purpose - her broodiness. i didnt actually BREAK the chicken so's ya dont have to call the govtment to fine me)

i'm going to have a whole army of good Sienna like chickens. i'm gonna call them OFG's Barnyard Wonder Birds and sell 'em for like a million bucks a piece.

thats the plan any way.

if i can get this demon page to turn...

It hasn't rained here the entire month of May. April, we were flooding, oh yeah, and the tornadoes. We need some rain - waterslide some down our way.

well we were not blown away either - so whew!

last nite i scampered to get everyone closed up as the storm was bearing down on us.... and.... it went north.

then round two - my hubby stayed up until 2:30am ready to sound the alarm and... the storm split and we didnt get enough thunder and lightening to scare the dog.

so we were totally saved but what a day!

and then.....

last nite when i came in to make supper and ..... everything in the fridge was above 50*. i couldnt believe it. i stood there and tested everything with a thermometer and ....ruined. all of it. and then i opened the freezer drawer. everything was COMPLETELY thawed. not just a little squishy... completely thawed and there was a gallon of melted ice cream all over the the bottom of it.

so i swore a lot.

and then started cooking. so i made a bunch of random stuff and we put it in the cold fridge downstairs.

TBM fussed around with the fridge when he got home. i stand by my story that it was Teddi Grumpkins (one of the cats) who ruined the fridge NOT me. this must have been going on for a couple days b/c as little as i like that fridge - it takes a while to cool down as we've learned from when the power goes out..

so now its at a cool 35* (yikes! too cold!) so hopefully we wont have to get a new one and this was a one time glitch. but still.... i'm having to throw all that stuff out. good bye mayo! good bye opened sour cream....

the pigs are getting a huge feast including about 3 gallons of milk - which is slayin' me b/c i had a bunch of milk from Nibbles. grrr.

but

i "invented" (ha!) a new dessert. i finally got a batch of ricotta from my cheese fail the other day and was so excited to make something pasta-y (thats what was supposed to be for supper)...until i realized it was just under room temp. so i used it to make a "cheesecake" and wow! it was really good!

i normally dont like goat milk products as subs for cream cheese but this turned out pretty darn good.

ricotta + egg+ sugar + vanilla in a graham cracker crust with jam poured on top and baked until set. its whats for breakfast.

and now i have to get another garbage bag and keep tossing stuff. but i guess the upside is that the fridge is gonna be clean.

ugh!

I had a few freezer failures in my time and they SUCK with all capital letters. breaks your heart doesn't it? but crap happens and we get thru it with a grin hopefully :D

I am pantry more now vs. freezer...after my last failure I am canning/preserving more. freezer failures just irk the crappola out of me :rolleyes:

Yep, that is the worst. We came back from vacation once (did we actually go on vacations at one time? Oh, yeah, apartment life!) to a thawed fridge and freezer. Even then I stocked up and had a garden, so it really killed us! Our grocery budget back then was $15 per week, so it really hurt. I feel your pain!

Thank goodness for pigs!

What a drag, and an expense! Fridges are necessities!

Our worst experience like that was a big freezer we had in the garage at the old place, big ol' thing. We had a friend who we would buy whole pigs from. I'd only go out about once a week and select a thing or two so when it stopped working it was about a WEEK before we opened it again.....and I about puked, all the meat was rotten.

We threw it all away (made the trash so heavy we had to pay extra) and then scrubbed out the freezer to repair it but we couldn't get the smell out. I tried every cleaner under the sun but the thing was gross.

What do you mean by failed ricotta? Could you use "unfailed" ricotta for cheese cake?

i'm just so glad it was the stupid little freezer in the kitchen and not one of our storage ones! we had to spend about $60 at the grocery which made me mad. but we have new mayo now

the pigz are about to pop - they are gonna have a huge growth spurt after this. i even gave some of the milk to the meats. we need to switch them to corn and milk so fatten them up for Their Lucky Day...which will be soon.

SD - i had an epic cheese fail the other day (a couple pages back). just gutting - i wasted about 5 gallons of milk b/c i didnt do the rennet right. i didnt stir it enough which was totally my fault b/c i was hurrying and not paying attention. some of the milk set up into curds but most of it was just a big grainy mass.

i took about half of the un-curds and tried to salvage it by making it a fresh blue cheese (ala Fankhauser's page). and kept about 3 gallons of the whey - and gave the pigs the rest.

i was able to make ricotta from the whey FINALLY (its never worked for me before) by heating it to 195* and adding 1/2 c white vinegar. and it finally WORKED!

i've never liked ricotta from the store but this was a whole other thing - it was spectacular. i had a couple bites on pasta that nite and had planned a whole pasta-ricotta-spectacular.

but when it was "ruined" (it was 50* when i found it) in the fridge i decided to try and salvage it and make something. i wanted to bake it and NOT use it fresh just in case.....and it really turned out beautifully. yay!

so thats what happened. i was so happy with the results. i'm not sure why my ricotta hasnt worked before but i might just make it with whole milk (the 200 cheese recipes has this method). and now i know i can use this ricotta as a sub for cream cheese.
