I love my "rabbit food", SD! I get pleny of protein from: nuts, oatmeal, beans, cheese, milk, the occasional pork roast, smoked Memphis style BBQ ribs, chicken salad, egg salad. The diet that i eat is low glycemic index. The only processed food i eat is pasta, which actually has a low index number because it stays in fairly large pieces after you swallow it. White bread and watermelon have some of the highest numbers. They will spike your blood sugar levels in a hurry. The fat and protein in real ice cream moderate its glycemic index, while fat free ice cream is just like eating watermelon or rock candy. A snickers bar has a low glycemic index because of the peanuts and fat. But why eat so many calories at once? Cookies and cakes are like a plate full of diabetes. That junk will kill you. I havent had a soda pop in 13 years, except a lemon lime soda that gave me a bad stomach ache. The reason i cut out the processed food and chemical fortified corn products, is because i dont want all those weird chemicals in my body. Fritos are okay, cheetos, and doritos are not. I read the ingredients, and if it sounds like a chemical, and not real food, i dont eat it. I started this after watching Food Inc. and The Future of Food. Two documentaries that my good friend who is a staunch conservative practically forced me to watch. I thought is was going to be some right-wing conspiracy theory stuff, Alex Jones and that sort of stuff, fun to think about with a grain of salt, wink and a nudge. But they proved to be very eye opening films. If you watch them, it'll make you want grass fed beef from a local farm, or you'll start raising your own chickens and rabbits.

Well I AM raising my own chickens and rabbits and ducks too! lol

I guess it does sound like you eat some proteins, but you didn't list any for that particular day.

I had a tomato sandwich for my snack. I don't eat bread often, but choose rye bread because it has a low glycemic index.

For my late supper i decided to do Pasta Creole: chopped onions, celery, bell pepper, tomato, garlic, and butter. Saute'. Add fresh chopped sage leaves and curly parsley. Add salt. Add tobasco pepper sauce and a dash of white wine (a quality California wine). Saute' 10 more minutes. Add water and bring to a boil. Add pasta to proportion, and simmer for 8 minutes. Mix two tablespoons of flour into 1/4 cup of water. Add to the pan to thicken the pasta water. Reduce heat and simmer uncovered to desired consistency. Add more butter, remainder of parsley. Turn off heat and add grated parmesian, cheddar, or american cheeses. Stir until creamy and melted. Enjoy!:cool:

That does sound good- does that little bit of flour really soak up all the pasta water? Or maybe I've just been indoctrinated by my Italian side that pasta has to have a LOT of water to boil in?

It's a cast iron skillet recipe. There's only about an inch of water that i bring to a rapid boil and toss in a handful of pasta. By the time the pasta is cooked, there's just a little water left. The flour and water mix is added to thicken the water/ butter mixture into a white alfredo sauce. The cheese gives flavor and saltiness. It was soooo good! Im still full and haven't eaten any breakfast or lunch yet. I think tonight ill do something with my new potatoes that i dug up last week. Maybe a fully loaded potato casserole, or rosemary potatoes, or French fries and ketchup, or potatoes au gratin. Yeah, au gatin! With garlic and parsley and lots of sharp cheddar. Okay. Now i'm getting hungry!

My Grandma Nettie (now almost famous in these parts) had a recipe she called Spaghetti Red. In her recipe you saute either ground pork, sausage or burger with lots of garlic and onion. Next she would add a jar of soupy canned tomatoes and chopped fresh herbs. Finally she would toss in that handful of pasta. It would cook in the tomato juice. The flavors were all very concentrated and it was YUMMY! :drool

Oh yeah ... this was all still done in a big cast iron skillet. Very little cleanup involved. ;)

Sounds delish, FF! Hmmm. Maybe i should do spaghetti tonight, use up all those ripe tomatoes sitting on the dining room table. Nope. Potatoes and cheese just sounds too good!

You know ... I think I am going to start a cast iron skillet supper thread. That way we can all post our recipes like these and be able to find them again. They are too good to lose in a journal. :thumbsup
