We brown our meat with the onions. Then add a couple different kinds of beans, mostly baked beans and kidney. I put three packs of mild chili and one pack of hot chili McCormick's seasoning in a 20 quart roaster full! I like to let it cook at least a day. We generally have ours over the course of a couple days. I don't like it real thick.
I love to put Fritos, sour cream, and cheddar cheese in mine too!! YUM!

Chili--in New Mexico chili is chili, red or green? made from chili. No meat or beans or other vegetables.

Chili con carne

Chili with beans.


So what was the original question? I got caught up with nit picking.


My "chili" is made with meat, usually ground meat or deer
pinto beans
tomatoes, sometimes stewed
onion
garlic
chili powder
chilis if I have any around
salt
pepper
cumin
brown sugar
mustard


The above is not a recipe, just an incomplete ingrediant list

I always thought that if it was called chili it had beans in it.. but I guess not.

I've only kind of chili that I have had is the kind my mother always makes - it contains;

Beans (pinto, kidney, etc)
ground Elk
Salt & Pepper
Tomato sauce
Mustard


There you have it. I always add crackers to mine. :) Yummy!

I don't like meat in my chili, I'm not a vegetarian, I just don't like it. I add pinto, kidney, and black beans, plus a couple jars of my home canned corn for a little crunch. Then I very quietly add a few cups of shredded zucchini, and so far no one has noticed!

I like toasted chili cheese sandwiches, chili on baked potatoes, and also on scrambled eggs.

I recently read a very interesting article on the Chili Queens of...San Antonio? It was in some Texas city.

When we don't have deer burger, we eat it vegan style. We like it soupy, spicey, chili beans~no kidney beans, canned tomatoes or mater juice, lots of onions, garlic, hot peppers, chili powder, olive oil, etc.

I make it soupy because I don't like the beans but love the soup. We prefer deer burger to any other kind of meat in our chili. We cook it all night in the crock pot.

How many of you all, like to cook up a big pot of chili, let it cool, then reheat it the next day?
I'm not talkin' leftovers here, I'm talkin' doin' this as part of the recipe. I swear it gets a better flavor when cooked the second time.:drool

You are absolutely right SKR

chili among others are always BEST the next day. the flavors meld and BAM you in the face the next day!

Never NOT eat it when first made, I can't resist...LOL

but the second batch I eat is tastier by far!!!!

Meat (not burger) and beans, thick and spicy!

Being close to the border we always top ours with shredded cheese, onions, sour cream cilantro and a big squeeze of lime!

Ate some last night!!! Ground deer meat, homegrown tomatoes, lots of beans and lots of spicy, extra hot sauce and red pepper flakes, lots of cheddar cheese and crackers.........dang, wish I had some left, now I'm hungry.
