You don't need eggs to bake! You can grind flax seed in your blender and add water and it acts the same.

1 Tbsp flaxmeal + 3 Tbsp water=1 egg

Also helpful to know....3 Tbsp flax meal=1 Tbsp fat or oil (of course applesauce subs 1:1)

HannaLee...thanks for the tip on flaxmeal..I picked up alot @ the Amish Bent and Dent store. And its organic!

Didn't know about the flax seed. I have used one tablespoon vinegar in place of egg before, but on the carrots, yes you can just shred and freeze--no need to blanch.

Today I am freezing oven roasted pumpkin!

I bought this big UGLY green and creamy orange pumpkin from the farm market a while back. The farmer said it was a good pie pumpkin but I bought it because it was so UGLY for decoration.

Today I decided to roast it up so it would be ready for pumpkin pies on Thanksgiving. When I sliced into the pumpkin WOW! There was about 2 to 3 inches of thick red orange meat inside of it and the smell was heavenly, something between pumpkin, candied sweet potato and melon! The scent was so intoxicating when I started roasting it my GEEK son came wandering over from next door because he thought he could smell me baking SWEET ROLLS! It completely filled my big roaster with about a third of the pumpkin left over for a second roasting.

We had pumpkin for supper with a little butter and salt and delish! :drool

So far I have frozen 14 Cups of the red orange delight in 7 quart bags preportioned out for future meals and pie making. Still roasting the other 1/3 and it smells great in my house!

I have no idea what the proper name is for this variety is but I am calling it "Green Goblin" ugly as all get out - but goblin' good! :D

Hey, me too! I put about 10 quarts of blended squash into the freezer, made 2 pumpkin pies and have a couple quarts in the fridge for soup, pancakes and muffins soon.

Farmfresh--A couple questions. WHY is your son a geek? I think you've mentioned this before :D

And, please tell me MORE about this squash you bought. It sounds like something I would definitely want to plant next year. What shape is it? Striped or not? Bumpy or smooth? It sounds absolutely perfect for decoration AND eating, plus a lot of it!

I call my dear 21 year old sweet 6 foot 2 inch glow in the dark red haired son the GEEK, cause that my dear is just what he is! :D

He has been interested in computers (and electricity) since he was about 6 years old. He is a genius (and I am not being braggy here). When he was ... around 8, I was trying to work out how to run the wiring for a 3 way switch (an on/off switch at either end of a stair way) when re-wiring my house. I worked and worked on the particulars. I thought I had it right - then this little red head freckle faced kid of mine brings me his schematic drawn in crayon. I took BOTH drawings to my friend the electrical engineer who was helping me with my wiring and then ... I started following a crayon drawing to get it right! :p

Another time he came running to me saying "Come see Momma, I can program in DOS!". That time he was not much older. He went to VoTech training in computers. He competed in school in the Skills USA contests and was third in the nation in computer network cabling. Even though he is currently laid off (like most of America) he is a computer whiz. He was in charge of maintaining the website for a major college in our area for several years and was always called in on the technical meetings for his advice even though he was the youngest (by several years) and the man with the least seniority (why he is now laid off). He also constantly hassels his mother about updating an already top notch computer system and is currently hounding me to either run a Lennox based format (which scares mom) or Windows 07!!!

As for the pumpkin. It was deeply ridged, dark green with splashed of creamy orange on it. Kind of short and squat. The skin was smooth. You could NOT smell the glorious smell until you cut it open. If you find out what it is really called let me know!

I have a freezer question and this seemed like a good place to put it. Can a deep chest freezer be too full??? I have a big one about 17cu ft. it's pretty full right now. All of the the food is frozen really solid but...

The other day my ds put some of those liquid freezer pops in. The next morning they were still liquid. That worries me. maybe it is the scary chemicals in the Popsicles?? Maybe my freezer is too full?

I have not checked them again since. I guess I should. Maybe I could get some of the tomatoes out and canned today. That would free up some space.

Anyways what do you all think????

FF--Thanks for the description--I have a couple possibilities circled in my seed catalogue :) As for your son, he sounds like a keeper!

TanksHill--I think the fuller, the better. It's a pain for getting things out, but a full freezer holds the cold better and more efficiently than a less-full one. Unless, of course, it is so full the the door is not properly sealing...
