I froze the mushrooms I dehydrated, in order to kill any little critters that might want to grow up and ruin my work not to mention being rather unappatizing and possibly bad for our health. :rolleyes:

Today I made and froze 3 pints of pesto. That's about a years supply, Hooray! Even though I love the taste of basil, all that fresh basil smell wafting around the house makes me nauseous.

Oh yum! I usually do this in either 1-cup containers or ice cube trays that then get transferred to freezer bags. Thanks for the reminder! Once I get done with peaches, I better move on to pesto :)

This past couple of weeks we have picked/stuffed/vacuum sealed/frozen/canned:
40 some odd pints of fresh peaches, canned.
40 some odd pints of beets.
I have to go count the green beans we have canned this fall.
1 dozen bell peppers, stuffed.
8 spaghetti squash,halved.
12 acorn squash, halved.
3 gallons of peas, blanched.
5 or 6 dozen ears of sweet corn,blanched, then cut off the cob.
3 large bushel baskets of different pepper varieties for making salsa later.
A couple of bushels of onions, some dried, some shredded and frozen for salsa.
Untold numbers of Zucchini have been shredded and frozen.
1 dozen Zucchini's,halved,stuffed.
Zucc's are finished,plants are pulled! :weee
1 dozen eggplant,halved,stuffed and frozen.
The potatoes are dug and in storage.
Saturday, I smoked a leg of lamb and a dozen Atomic Buffalo Turds. :love me some Turds!

Today I am heading out to start picking and processing the 'mators. Still have to go pick the FREE pears, elderberries and the apples. :th :th :th

Six quarts of herbed creamy corn. My dear husband husked a load of corn and cut it ALL off the cob. In my fatigue at about 1 a.m., I forgot to turn the burner off of the huger pot and lost about 9 quarts to a slow burn :( But, the remaining 6 look delicious and will go into the freezer tonight.

I froze today....

10 lbs of butter (got it for $1/lb)
1 beef heart ($1.29/lb)
14 lbs of boneless pork chops ($1.89/lb)
10 lbs of smoked bacon ends and pieces ($1.39/lb)
12 lbs of boneless/skinless chicken ($1.57/lb)

A bushel and a half of fresh picked sweet corn. From the stalk to the freezer in about 3 hours.

Four quarts of green tomatoes for green tomato stew later :) Now I'm thinking about that yummy-looking green-tomato mincemeat pie mix I just read about on here :drool
