it was a long day. i think we baked (or are about to bake the last pan) enough to feed a lot of people. both veggie and meat versions (rice, onions and mushrooms in both versions - the veggie version substitutes mixed vegetables for the meat). about 60 total.
whatever peppers we weren't going to use were sent off with my brother and they'll eat them or give them to others. i like that kind of magic disappearing act.
the hot peppers (and a few i wasn't sure if they were hot or not) i chopped up and mixed in with leftover ingredients from above and put in two bowls and baked them. i'll eat those myself as Mom doesn't do hot stuff plus she also doesn't even eat the green peppers she just likes a bit of the flavor in hers - so i end up eating the peppers she takes off hers too - i get a lot of green peppers this way and i'm good with that as they are mostly water in the end anyways. extra low calorie filler...
