Last nights dinner was boring, bacon and eggs with cheese and mushrooms.

No breakfast today, lunch was egg scrambled w/ mushroom, bell pepper and tomato. Topped w/ cheese, green onions and avo. Halfway through, I'm stuffed!! My hens are eating way too well lately.

Going on a walk! Then off to get bunny food for my adult doe and a coffee. Shhh, brianna *really* needs to cut the coffee!!

Hey, you know I quit coffee last week some time. I found some decaf beans at Costco for when I need a coffee fix. (Not every day though.) It makes a really good cup of coffee. :)

Breakfast:
eggs
blueberries
water

Lunch:
shrimp, garlic and veggie saute
water

Dinner Plans:
biggy salad
side of meatloaf
water

Snacks:
Sam had leftover meatballs
I had a sliced apple with almond butter

I didn't go!! Two days, no coffee...the problem is I don't drink, don't smoke, don't do drugs and I'm stressed out and unhappy during winter :/ So I allow myself one vica: coffee. Two days down!

Got my coconut and brazil nut flour!! They added in chia seeds for free :D Making coconut flour pancakes then brazil nut primal friendly cookies. Will report back.

Mmm!

Meatloaf

1 onion, diced;
2 lb ground beef;
1 cup almond meal;
2 eggs;
1 can (6-8 oz) tomato paste;
1 tbsp minced garlic;
2 tbsp dried basil
1 tsp marjoram;
Cooking fat;
Sea salt and freshly ground black pepper
to taste;

1 Preheat your oven to 350 F.
2 In a bowl, mix all the ingredients together except
the cooking fat.
3 Grease a loaf sized glass baking dish and place
the meat mixture in it to form a loaf.
4 Cover the top of the loaf with melted cooking
fat.
5 Bake in the oven for about 1 hour, until cooked
through and until the meat is no longer pink in
the middle.

Hehe, I know its bad for me. Will do Yerba Mate and decaf when I really need to.

Mmm! Ill have to try that out when I can get meat :D

Coconut flour pancakes: yum!! Far less grainy then traditional gluten-free pancakes, sweet and didn't taste like coconut! I made them with blueberries and local sage honey.

Almond chocolate chip cookies: made these with brazil nut flour, however it was more of a meal. I will contact the company about this. It turned to mush, didn't keep its texture :( Will post recipe...

Oh, btw for anyone new reading this when I list pork, ham or bacon, it is from the happy piggy we raised in a pasture. And (should this be a given around here?) the eggs come from our own flock of yard birds. They have a full acre on which to free range.

I also found a pretty good tasting beer called "Redbridge" that is gluten free. It is made from sorghum. It isn't as strong as beer, but if you add a splash of vodka you'll get your kick. :lol:
I love Redbridge. I finally can have beer again even though they dont carry it very many places (only 1 in my 30ish mile radius) lol
