"Creamy" Coleslaw:

1 head red or green cabbage, finely shredded;
2 large carrots, finely shredded;
1 cup homemade mayonnaise;
2 tbsp grated onion;
2 tbsp lemon juice;
1 tbsp dry mustard;
sea salt and freshly ground black pepper
to taste;

1 In a large bowl, combine the mayonnaise, onion,
lemon juice and mustard. Season to taste with
salt and pepper.

2 Add the shredded cabbage and carrots to the
bowl and mix everything together.

I add raw ACV to this recipe to thin out the dressing a bit.

This tastes fantastic when the homemade bbq sauce mixes in a bit.

ETA: I add a bit of raw honey to Sam's coleslaw.

Throw in a can of crushed pineapple if you wish, or run a fresh one through a chopper.....amazing! :drool But skip the ACV thinning if you do, the pineapple juice will do it and adds a nice sweetness without making it pineapple-y.

Great tip! I just edited the post b/c I had to sweeten Sam's up a bit. I never thought to use pineapples and juice. Great idea! I always have a can or two in the pantry.

Almond meal carrot cake.

This part is easy.

Cream cheese frosting. How do I get the fluff without the sugar? Cream cheese and butter and stevia is easy enough, but it is not quite the right texture. Any ideas?

My step dad asked me to make him a carrot cake and he's willing to taste test my attempts at low carbing it.

Hmmm... possibly? I actually cannot recall if he likes the flavor of coconut or not!

That would at least water it down without losing flavor! I'll try it, at the very least.

Today I made him an utterly anti nutritious red velvet cake per his request :D Usually I low carb desserts for him but I didn't bother. He just got out of back surgery and had a crazy craving for red velvet cake. So his step daughter provided!!!! :)

Tonight's dessert...

Double Chocolate Cookies

1 cup almond butter;
1 tbsp melted butter, ghee or coconut oil;
1 egg;
cup cocoa powder;
cup dark chocolate chips;
2 tsp vanilla extract;
A pinch of fine sea salt;

1 Preheat your oven to 350 F.
2 Mix all the ingredients well together in a bowl.
3 Line a large baking sheet with parchment paper,
scoop out pieces of dough about 1 tbsp in size
and press them on the parchment paper in the
shape of a cookie. The cookies wont expand or
change shape when cooked.
4 Place in the oven to bake for about 12 minutes,
until just cooked.


I added unsweetened coconut flakes, cinnamon and a bit of stevia. OMG!!!

Nummy!!

Tonight is hotdogs w/ cheese avocado and norm toppings (mayo mustard relish.) Was good, asked hubby to *blacken* them next time lol. 2 was enough.

Breakfast: eggs w/ mustard and salsa verde, topped w/ avocado. Mine included tater tots today as I'm trying to finish the bag and get it out of here.

Lunch: egg salad; homegrown eggs, relish, mayo, celery. Didn't not dig, too much myo, chooks loved. Few pieces of mozzarella & pint mason jar of water.

Dinner tonight is out, and they only serve chocolate mousse once a year. YUM.
