I work a public school schedule and have Cub Scouts and Little League to work around. What's yours like?

Um...what does that leave you? :p I can get to WF on my way home from school on Sat or Sun, probably around 6 or 6:30, (how late are they open on the weekends?) depending on whether or not students monopolize me after class. Or I could run down on a Monday or Tuesday evening, depending on dh's schedule with the car.

Website says 'til 10 seven days a week. Weekend evenings/nights are fine. Saturday baseball games are either 11:00 or 1:00.
Mondays are Cub Scouts nights. A Saturday night would be my first choice!

Just made a batch of waffles from Bob's Red Mill sorghum flour. I used a recipe from their website.
a) I was able to find all ingredients
b) I ended up with something that looked and acted like waffle batter
c) They rose in my waffle iron
d)DS ATE ONE!!
Phew!

Of course I will share! I just tried them this evening and DS was still hungry after dinner so I let him try one.

Cindy's Surprise Waffles

Cindy wanted to share this recipe, in case it could help another gluten intolerant waffle fan. Enjoy!
Ingredients
1 cup Sorghum Flour
1/2 cup Tapioca Flour
1 tsp Xanthan Gum
1 Tb Baking Powder
1/4 tsp Sea Salt
2 Tb Granulated Sugar
2 tsp Cinnamon
3 Tb Butter
2 tsp Vanilla
2 Eggs, large
Water, as needed (about 1 cup)

Directions
Preheat waffle iron and coat with cooking spray. Mix together dry ingredients in one bowl, and wet ingredients in another (except water). Add wet ingredients to dry, cutting in with a fork. Slowly add water to the mixture and stir until reaching desired consistency. Mix quickly and no more than necessary to combine ingredients. Stir in about 1/3 cup raisins if desired. Cook waffles immediately. Makes 4 waffles.

Variation: Substitute fruit juice for water.

You're welcome. Will you be able to eat these? I had a nibble only since I'm pretty much grain free at this point.
It's working. I've lost 24 lbs as of this morning!! :celebrate
