Speaking of grain free....I noticed that Ladychef posted something about having to add grains back in because if health issues. I didn't think there was any problem with skipping grains. Anyone here know?

I am going to go ask her :)

Oh, thanks for the waffle recipe!

I am not sure of specifics, Dace, but I think that every food class has certain vitamins ... minerals ... or fibers that you can get no where else. Variety in a diet is important. You don't need to eat wheat, but you should at least eat milo, or rice, or SOME kind of grain. Even if it is only occasionally.

We do on occasion.....I mean I'll eat homemade pizza dough every week or two and usually prepare a grain once or twice a week with dinner. Guess I should look a little more deeply into that.

Somehow I missed this post....Probably May 22 would be ok, this coming week is the first week of classes for the summer semester and I may have to go in all day and will be POOPED! PM'ing my cell phone number....

Don't know about the grain issue, but I can say that the doctor made sure I was getting certain supplements to replace what I'd be missing. It's a good question. Fiber can come from other sources. The weight loss is from cutting the carbs of all kinds, not just gluten. No rice, no potatoes, and almost no processed foods. Organic nut butters and frozen veggies are about the only packaged things I eat these days. Oh, cheese. Once my 10 dairy free days are up I will be eating cheese........ until I can make my own goat cheese! Happily in a way cutting dairy has not improved the itchy skin at all. I think we will do food allergy testing when I see her next. I'm reacting to something!

Why did I say 10 days? It's two weeks and it's heck. I hate not having dairy. I'm as itchy as ever. Frustrating.
I am sending the letter letting DS's principal know we are pulling him out at the end of the year. I'm nervous but it needs to be done. They are starting to plan classes for next year. I let her know I'd be happy to talk about our reasons but it is a done deal. Coincidently we vote on our town budget tomorrow.
DS has been eating none of the foods he tested allergic to since Friday. Today at school his teacher noted that he was calmer and zipped through his morning work although he ran out of steam. Still, he had a much better day than any day last week. His seasonal allergy symptoms have eased some too.
Last night I coated cod in egg and sorghum flour and pan fried it in olive oil. He loved it! I had been buying gf fish sticks but of course they are made with rice flour. He was whining for some so he got something even healthier. I think sorghum flour is my new best friend! :cool:
No news on the goat front except that I picked up a water bucket when I was getting dog food at Agway. Baseball tomorrow night and DH's band Wednesday night. It will probably be the weekend before we start laying out the fence.

Forgot to add:
4 regular Mondays left to the school year! Memorial Day takes one out and then the final Monday I can't see my HS kids because they have finals.
Had a neat experience today. I saw one of my Thursday kids in the hall. This kid is quite troubled, skips classes a lot. I was having a really hard time getting him to come to speech therapy sessions. Then one day I got him up to the room and somehow caught a little spark of interest in a picture of Native Americans from a century ago. I can't even remember how it happened exactly. Anyway, my superivisor and I, along with his English teacher, have come up with a project for him to do some reading and vocabulary work around an article about a famous Native American for English credit he needs to finally move on to 10th grade. (He's in 9th for the second year now). The cool thing that happened was that I saw him in the hallway with his troublemaker friends and he smiled and waved at me. :th That simply does not EVER happen! If nothing else positive comes out of this year I had that moment!

I appreciate how big a deal that is!! I think you touched a kid with caring this year Hen. :D

I love the sorghum flour as well. Have you tried fixing your son millet? I notice it was not on his no, no list. You can do some of the same things with millet as you do with rice... pilaf etc... :cool:

Your sons allergy list is actually smaller than a friend of mine's list. (If you can believe that!!) She is also allergic to beef, turkey, lamb and rabbit meat, all of the plants in the mustard family (turnips, endive, other greens of that type), avocado, but she can still eat most tree nuts. It is crazy hard to go out with her to eat!! Just to feel a bit better about all of this she is an athlete and runs marathons, so you CAN have a limited diet and still stay healthy and strong. :)
