Well, our friend M came over and started on the lean tos yesterday. He got 3 posts in the ground and set and then left. Now I love him to death and I am glad to help him but I am not gonna sit here and let him just take my money. He was supposed to be here this morning to hopefully get them up today. Well, it's almost 11 and he's not here yet.

The guy J that did our other work for us did great work but I'm not paying him to talk on his phone all day. He walked around with one of those bluetooth earphone thingys in all day and you never knew if he was talking to you or someone on the phone.

I'm sooooo over it. Hubby could do it but he just doesn't BELIEVE in his abilities enough to take the plunge. That and he's scared of my dad. :rolleyes: Daddy had done construction all his life so he is a real stickler for everything being plumb, level, true and correct.

Well, hubby just called and evidently one of m's horses that he's boarding for a lady got out this morning and he has spent all morning trying to get it back in the fencing and repair the charger on the fence. Good grief.

I'm doing laundry, last night I made a chicken pot pie and chicken salad from scratch with some of the chicken I had to cook from the freezer thaw. It was sooooo good. Now I'm off to find some zucchini recipes to use up the gigantic box of zukes that my hubby's aunt gave us.

Can I shred and freeze zucchini or does it have too much water content?

I do, that way I can make bread later in the year I shread it into 3cup baggies and each bag will make 3 loaves ,My SIL she slices it and chunkes it and she freezes it that way so give it a try I dont know if hers is muchie but for bread it will be just fine

Yes, shred and freeze. In my experience, the water will come out of the zucchini over time, but just add it all to your bread recipe, if that is what you are making. It works great like that. I tried draining it once before adding it to the cake I was making and it was not very good. :p Since then I learned my lesson and don't drain it and it comes out perfect. :)

P.S. -- Did you ever see the chocolate zucchini cake recipe I posted here once? It is a favorite of mine and is great for using up huge zucchinis. I can't remember if your family has any gluten intolerances . . . if so, then sorry for all the cake and bread talk. :hide

Thanks guys...I'll have to look up that recipe. I found recipes for cookies and muffins that I plan on doing tomorrow for a cookout/baby shower that we are going to.

So today I made zucchini chocolate chip pecan muffins and my children at the whole batch. Hubby didn't get a single one.

Then I made oatmeal raisin zucchini cookies and a peach/blueberry cobbler for tonight's get together.

Got to go get dressed and load up the bouncy house :rolleyes:

Well, last night we had a blast at Aunt J's house down the street with all hubby's family, minus BIL who wasn't invited :lol:

A loved her baby gifts and Chad is going to watch all the children this evening while they have the baby shower. I am getting ready to pack up and head out to granny's in a little while.

We got the rafters up on one side of the lean to yesterday and Quack, uncle's mallard, came for a visit yesterday and is slutting it up around the barnyard trying to make one of the runner ducks her man. Mama ducks aren't having any of it. They are chasing her and trying to nip at her. She doesn't seem to care she keeps doing circles around the boys and shaking her tail feathers and quacking her little heart out.

Sold 4 babies yesterday, 2 males and 2 females. The lady and her husband were very happy with them and we had a good visit.

Oh, hubby has said that he secretly planned on using one side of the lean to on the shed as a milking parlour/goat shelter!!!! He has agreed to 2 nigerian dwarves and cousin B has already put in an order for some goat's milk!

Such a nice surprise, I love my hubby! :love
