Can you add a little squeeze of lemon? using a straw helps too! Once you get in the habit, it gets easier :)

this is a whole learning experience for me.

I grew up eating chicken fried steak with mashed potatoes, corn dogs, mac and cheese, pizza, spaghatti, lots of mexician food.

Keifer is a sort of liquid-y yogurt, it is full of healthy bacteria for your digestive system. Same with kombucha....which is a fermented tea.

The theory (as I understand it) is that part of maintaining healthy digestion is to add to/replace the healthy bacteria in out gut to help process our food. The less healthy bacteria the hard it is for our body to process what we eat. This healthy bacteria comes in many forms, yogurt, keifer, lacto-fermented foods and kombucha.

The reason that I ask about the kombucha is that Free was talking about expelling the waste and when I drink it regularly I have great poops. I know that sounds disgusting, but it prevents (in me) the tendency towards constipation. I can eat all the yogurt in the world and have no obvious signs that it has helped my body in any way....drink kombucha and the next day, like clock work, I feel cleaned out. :thumbsup

Dace, don't use raw spinach daily. It can cause....um.....brain-freeze! Um....kidney stones? Nutrient deficiencies? Can't remember, just don't have it raw daily. I still have it in shakes and salads, I just vary them.

Do you like dips? I love 'em. Green beans, snow peas, sugar snap peas, cukes with the skin (in winter, you can sometimes find pickling cukes that aren't coated in paraffin, and the wrapped European cukes), etc.

Try cooked greens this way....cut up some salt pork into little pieces (1/2 inch by 1 inch, maybe) and fry them in the bottom of a big stock pot. Wash and tear up a bunch or two of collard greens, removing the larger portions of the stems. Add to the pot, along with a little more water....maybe a cup? Cover and simmer on low for an hour. Stir every 10-15 minutes and add more water if needed. Serve well-salted with additional sea salt, if needed. You can eat the salt pork or toss it to the dog or hens. You can do any greens this way, but the cooking time will vary.

Try Swiss Chard with garlic and sunflower seeds. Cook the big stems as a separate veggie, steamed and served with lots of butter and sea salt, my favorite. (My mother made this years ago when our goats got out and ate all the leaves of the chard in the garden, leaving a long row of stems! :lol: ) Or put the cut up stems in a soup like celery.

Greens can be quite yummy if cooked creatively.

And OG, you are in for a culinary ride that is mouth-watering, a lot of work at first, and will turn your health around even if you didn't know it needed to be turned around!

One thing at a time. Check out the fermenting thread for an idea of all that talk of kombucha, kefir, etc. Adding home-fermented foods is cheap and easy and very, very good for you.

Kombucha can be purchased from health food stores, it would be in the refrigerated section. Of you can brew your own. You need to locate a scoby first. BBH was kind enough to send me one and when it reproduces I would be happy to send some your way. I would suggest finding a commercial kombucha to start with. And then we can work on getting you brewing your own.

Free....I had no idea about the raw spinach! Thanks!

I LOVE GreenSmoothieGirl.com. I have her recipe collection for smoothies. I do not agree with her vegetarian beliefs, but for smoothie recipes and hints on how to add more veggies to your healthy meat meals, she's the best!

Bok choy is really tasty in stir fry. My ducks love it too! (I always slip them some of the end pieces :D )

Okie, I thought you might find this helpful. I know that you are working on decreasing your carb intake....this is a glycemic index site with lots of good info. Along with decreasing the carbs should be increasing your low glycemix index foods.....which are foods that do not cause a spike in blood sugar. Carbs and high glycemix foods act in similar ways....spike in blood sugar triggers and insulin response which wipes the sugar out of the blood stream, causing low blood sugar and a craving for more sugar. It is a vicious cycle that can easily be avoided.
