There is some disagreement on the glycemic rating of carrots. I am of the opinion, mostly through experience with people in my classes, that raw carrots are pretty darn low and are a free food. The naturally occuring sugars are higher than other veggies, but the fiber content is among the highest so that moderates the impact on your blood sugar. When you cook them, you raise the GI a bit, and when you juice them and toss the fiber, it goes through the roof.

I tell my students to eat all the raw, whole carrots they want. Go for it. Just don't turn orange! :p

Baby carrots make me hungrier after I eat them. For me this is a sign they are triggering quite a bit of insulin release. The ginger carrots (fermented) don't give me this reaction.

Interesting....I get very sick on even a tiny shred of cabbage, so I don't eat restaurant salads unless they use a cabbage-free mix. But I can eat fermented kraut, no problem.

funny and baby carrots for some reason fill up my gut fast and I don't get hungry quick

I always eat baby carrots in my salads, they truly seem to add the crunchy bulk and fill the tummy for me!

weird how everyone is so different

My 'snack bag' was about 1/3 carrots and I was stuffed until dinner, I only had 1 cup of soup....and was over stuffed the rest of the night. I ate it between 2 -2:30ish!

Interesting how our bodies all process foods differently.

You ladies are just a wealth of great info!

Just when I decide to go hard core low-carb a beautiful, cranberry swirl bread shows up in the photo of the week! :p Doesn't it look yummy?

That reminds me does anyone know about how many carbs there would be in a single slice of home-made sourdough bread?

I am so lucky I wasn't a bread lover.........my problem. pizza dough...UGH--love to even eat it raw

I just made a small cheese pizza on my flatout bread flor lunch. I think net carbs are 6 in those. So I did good.

anytime I can sub food it works well for me.

I love drippy oozey delish garlic butter on shrimp.....beats bread anyday..LOL
