i must be the only person who kinda likes plucking :hu i thought it was the easiest part and went really fast. and there's something satisfying about ripping those feathers out, especially on a nasty mean bird.

No .. I like it too. :) To me it is far easier than skinning and I have a better end product IMO.

Gosh, I hated plucking. Maybe we are doing it wrong. What method do y'all like, is there a thread you can direct me to on BYC or somethin?
I thought plucking our ducks was the hugest chore, I need to know how it becomes fun. Or therapy....either would be good.

It is ALL about the temperature of the scalding water.

Get a thermometer and get that water to 160 degrees Fahrenheit. Squirt in some citrus dishsoap, it helps the feathers wet faster and also cleans the bird and smells better. Now dip and swish about 55 seconds and then pull on a wing feather. If a main flight feather comes out easily you are done scalding. Not long or hot enough and the feathers won't come easily out. TOO long or hot and you begin to cook the skin and again the feathers won't come out. ;)

OFG, I found a cookbook for you!!! Pig: King of the Southern Table

I have recently started reading GlutenFreeGirl.blogspot.com Her last post she recommends 12 cookbooks that she feels were the best of the year and this one made me think of you!

I highly recommend her blog...even if you don't have issues with gluten. Having a severe gluten allergy forced Shauna go completely reinvent her cooking style, which-oddly enough-reminds me of you, OFG!

She insists on using good quality ingredients and cooks with whole fresh foods. She explores lots of different styles of cooking and takes recipes that she finds intriguing and tweaks them (if needed) to be gluten free.

Just thought I would share with you....you may want to ask The Big Man for this one for xmas! :hugs

Yes, it has been unusually quiet here on OFGs front porch. In fact I have been sitting here so long I am getting hungry!

Hey ladies, did anyone bring pie? KC, can you squeeze in thru that window? I bet there is pie on the counter....just watch out for all them cats! And while you are in there take a little look around, maybe all those cats have OFG and The Big Man tied up and docked in the closet or something. Dang cats.
