Wow, that recipe sounds like a modern version of fermented peppers! Should be exactly what I have in my fermenting fridge about now.....awesome! (Chopped peppers, seeded, sea salt, whey, fermented until a bit sour.....which is what the vinegar does in more modern recipes!) Cool! Er....I mean.....hot!

Yep yep. I thought it sounded like my dad's sauce, just with whey instead of vinegar, back when you were talking about your peppers. I didn't have my recipe book/pages sitting on my desk :D

I'm still working through our last batch. I put too many habaneros in it. HOT!
What do you think about making a batch of very mild, with whey & mixing the 2 together? How do whey & vinegar interact?

I think the antibacterial properties of vinegar would kill the lactobacilli, so only mix them well after the fermentation process is completed. Maybe when you are preparing dinner, rather than keeping a jar of the two mixed together in your fridge. Well-fermented peppers will have enough sour to taste like the recipe with the vinegar, for future reference. I SO wish I'd made more dill pickles when I had the fresh dill and cukes coming in. They are quite sour without being vinegary. Yum.

Yeah, darn for sure. I say that everytime I think of my bumper crop of cukes and that one little quart of dill pickles that I am saving for....um....the dead of winter? I still have a jar of cuke salsa and the bruschetta thing I made, so another taste of summer to be saved for the first big blizzard!

i'm not done yet!!!

having "turkey and dumplins" staring pumpkin, of course. am using lots of thyme, black pepper, and sage in the biscuits.

of course when i was trying to come up with something quick and easy for dinner it didnt really occur to me that we are still on this turkey for every meal kick! yikes! oh well - the house smells good

Swiss Fondue- I broke down and bought a package of the premixed stuff, surprisingly good. :D
