it was, and in a while we'll be having dinner with a few more of those included on my plate.

Corn finshed and fatted CCX 1/2 chicken, 5.08lb. Covered in warm bacon grease, redman salted and black peppered. I got it on the electric smoker with dead apple branch wood chunks for smoke. Going for low and slow 225F ~ 250F, with a target thigh temperature 168F. Needs about 45 minutes cooking time per lb and 1/2 hour rest covered.

Every meat I've cooked in this electric smoker has been delicious, thanks to this a handy chart for selecting smoke wood.

I'll let you know how chicken turns out.

That chicken looks great! I've been making marinara for two days; now canning it. 21 pints so far; more to go. We had some for dinner last night, but it is much better today now that it's a bit thicker.

Tonight will be Chinese apricot chicken, same as orange chicken but using apricot instead of orange. Sides of rice and asparagus.

Dang, I'd have forgone the crackers though

i had the meatballs and sauce on a proper bed of spaghetti. it was mainly for a bit of humor that i put that together this morning. then we had to argue for a while about the presentation until the top cracker started to warp from the sauce moisture. laughing the whole time.

i made up for it later by teasing Mom with the small flashlight laser pointer, best $3 i spent in a long time. it works for cats so why not wilder creatures?...
