What the heck is a scuppernong??? Never heard of such a thing :)

Dace, I am feeling pretty OK last few days. The busier I stay the better. Scuppernongs are a wild grape related to the Muscadine that grows in the SouthEast. I have a huge vine in my yard but my friends FIL has a huge Orchard of the really huge ones that we went to last summer. I still have a stockpile of them in the freezer. I have been trying to use up all of last years stuff from the freezer and stock new stuff.

I would be happy to share this recipe. I got it from a dairy goat farmer that lives in the panhandle that Joined my Panhandle Farmers, SS, Yahoo Group. My mom used to make the same cheese when I was a young child but she forgot the recipe. This cheese is a non melting crumble cheese. Its very mild and takes on the flavor of whatever you mix it with. Its good on salads, as dips, on crackers etc. Im about to put some on some scrambled eggs:) Enjoy.

Queso Blanco Cheese
( also called vinager cheese)
need a collander for drainingg and x-fine cheese cloth or bleach an old cotton pillow case.
1 gallon goat milk(or store milk if you don't have fresh milk)
1/4 cup vinagar(i like to use red wine vinagar but white works fine)

bring milk slowly up to 190 degrees stirring to keep from sticking to pot and scalding.When gets to 190 turn add vinagar,turn off heat, keep stirring and with in a minute you should see very fine curds.Keep stirring a couple more minutes to give time for all the curds to make and then slowly pour into colander lined with the cloth.you may have to scape down the cheese along the sideds as it blocks up the draing ability of the cloth.when all is in tie the corners of the cloth together and hang with a bowl under it ( I hand from cabnete door handle) Not the longer it hangs the dryer the cheese will be.This is a non melting crumbly cheese very mild and it takes on the flavor of whatever you mix in with it.I usually only hang about an hour or 2.you'll have to adjust to you likes.I take down and un tie cloth and put cheese in a bowl and add a pinch or 2 of salt and stirr in.Now from here let your imagination go.Hubby likes his with bacon bits and dried onion flakes.I also like with garlic and basil.I also have made a "dip" by adding chopped black olives and pico de gio(sp?) .This all is great on crackers.I like town house best but ritz is good too.This is a easy great first timers cheese.Cheese keeps about a week in fridge.It never last longer then that becouse it gets eaten pretty fast around here<G>
Note: although I have not tired it I have read you can use lemon juice instead of the vinagar.

Oh, I have made that recipe except with cows milk.

Cool, I have a local store that sells goats milk, I will have to pick some up and try it. Thank you!

Yes you can make it with either. It was good with some scrambled eggs and bacon bits this morning with some fresh baked flax seed bread toast.

What is Pico De gallo? Is that another name for this cheese?

I'm off to a good start this morning, I have managed to sell some chicks and extra chickens. Money is good, I made enough money off a few biddies to pay for my bi monthly Avon addiction, LOL, one addiction to pay for another, Works for me! My avon lady is also a girl I went to middle school with that is raising Muscovies, I have traded eggs and babies with her for avon in the past too. I'm all about Bartering!

On a sad note I'm having to rehome the Pit bull I rescued 7 months ago. I just cannot break the prey drive she has for chickens and ducks. I have tried everything I can think of. She doesnt try to get into my pens but if a chicken or duck manages to get out some how they are TOAST. And its not like she eats them, as soon as they stop moving the game is over and she looses interest. I cannot let her take any more food off our table. I love her and she is a great dog except for that part. I dont want my other two dogs to catch on to her game and start doing it so Now is the time for me to do something. I found a lady that is a stay at home mom with 3 young boys. She also owns her house so dont have to worry about landlords freaking out about a pit. Im going to meet with her tomorrow to see what kind of feeling I get. Its sad to see her go, but what other choice do I have? I've tried everything.

I'm not going to be able to go to the Flea Market as planned yesterday because of the weather and DF has to work. Hopefully I will sell enough on Craigslist this week.

pico de gallo is a rough chopped fresh salsa 1\4" sq cubes tomato, cilantro, garlic, peppers, onions, etc
very yummy

Today has been kind of productive. I got the animals taken care of., Everybody got baths, Son got safely on his way with his granny to spend the weekend with his dad. Got the House almost all the way vacuumed, and the dogs fed. The lady I mentioned came and go jazzy. She was a really nice lady and she seemed interested in keeping up her frontline and Heartguard. I hope she takes care of her. They seemed like nice people. Plus they have kids which jazzy loves. It was weird tho, Usually when people come in the door the dogs are all around them licking and wagging thier tails. Jazzy came out like the other two and had the tail going ninety to nothing, then after a minute went and hid under my bed. That was weird. I think dogs can sense change. We sure are going to miss her. I hope the girl keeps me updated on how shes doing. I asked her to.
